Crock pot recipes? Healthy and delicious? :)?

Im looking for really good and delicious crock pot recipes. I love slow-cooking but I don't always like feeling as if I am eating a big mumbo-jumbo whose flavors are all mixed together. Do you know what I mean? So I like recipes that are simple (like cooking the chicken breasts with apple slices and potatos and then having a side dish of veggies or something else later on). But I want the slow cooker to do most of the work and I just want clean fresh, decently healthy recipes. Oh and especially seafood recipes if you have any...i dunno if seafood is too strong a flavor to use in crock pots.

Thanks for your help if you can!Crock pot recipes? Healthy and delicious? :)?
Tortilla Soup:

1 large can of chicken broth

1 packet of taco seasoning

1 can diced tomatoes

1 can corn

chopped onion

shredded chicken (cooked)

Add ingredients to the pot and cook on low for 3-4 hours. Add chopped cilantro and cook for an additional 30 minutes on low. Serve and enjoy!

You can top it off with shredded cheese, sour cream, and a cilantro leaf to garnish.

Everyone loves this soup and without a topper...it's extremely low in calories but full of flavor.Crock pot recipes? Healthy and delicious? :)?
