I'm looking for a good healthy recipe for vegetable fritters?

Any recipes that are yummy and healthy would be great.


I have carrots, zucini (courgettes), potatoes, corn. I can grab other veges if necessary.

1 egg


2/3 C.milk


1 Tbsp.oil


1 C.flour


1 Tsp salt





You can make fritters out of practically any cooked


vegetable. Green beans, wax beans, carrots and summer squash are very good; sliced tomatoes are marvelous; even turnips are


good. Drain the vegetable. Make a batter out of egg, milk,


oil, flour and salt. (For a thinner batter, use 1 cup milk.)


Dip vegetables in batter and fry in hot fat until lightly


browned, about 3 minutes. Drain and serve.

Do you mean like a deep fried fritter?I'm not sure what other kind there is, but it sounds great.
