I want to change my unhealthy habits, but I need to re-learn how to cook so I can eat healthier and lose weight. I don't want to diet, I want to switch to a more healthy lifestyle.
So, what do you eat for dinner? I have to cook for me and my husband most days, and I need a lot of good, easy recipes to make the transition easier.
I mostly shop at Trader Joe's, our local health food shop, and also Albertsons, local chain grocer, so I can get pretty much any ingredients, but I'm looking for easy stuff.

Salsa Chicken
Throw frozen 3 boneless breasts in crockpot
Sprinkle a pkg of taco seasoning on top
Pour a jar of salsa over top
Cook on low 8 hours or high 3 - 4 hours
Leave as is or shred the chicken, leave it in the salsa mixture, and top it with shredded sharp cheese. Eat rolled up in tortillas.
Easy Chicken Parmesan
Favorite spaghetti sauce
boneless, skinless chicken breasts (3 - 4)
shredded mozzarella cheese, part skim ( 1/2 cup)
grated Parmesan cheese (1/2 cup)
Preheat the oven to 350 .
Top with sauce and then the cheeses. Bake about 30 minutes or until cheese is golden and sauce is bubbly. Serve with pasta.What's your favorite easy, healthy dinner recipe? Trying to lose baby weight...?
Make a nice vegetable soup
Gently soften onion, carrots and celery in a large pot in a little oil.
Add water an simmer, then add a ham bone and regular soup mix,for about an hour.
Remove the ham bone and remove meat and shred. Return to pot and reheat
Add some frozen vege and season to taste.
Lunch today
uhm. i normally eat chicken breast in lemon sauce. its really good. heres the recipe:
preheat the oven to 350 degrees.
place chicken breasts, squeezed lemon juice, salt, pepper, and any other additional spices in a pan (its fun to mix things up.)
place it in the oven for 30 minutes, or check periodically until the insides are white.
after its done, you can add more squeezed lemon juice mixed with herbs as a sauce on top or around the chicken. :)

EGGPLANTS PUREE :
Grill the whole eggplant on the barbecue until you can peel the skin easily.
In a pot, smash them with olive oil and some whole peeled tomatoes, salt, pepper.
You can also add crushed garlic.
Eat it warm or very cold
GRILLED VEGETABLES :
4 zucchini
2 eggplants
4 yellow zucchinis
olive oil
thyme, salt %26amp; pepper
In an aluminium foil, put all the vegetables that you would have sliced or diced,
the salt, pepper, thyme and olive oil,
close the foil but leav a little opening, and cook on the barbecue.
Very simple and very tasty. In fact you can do the same proces with any vegetables.
Asparagus and Portobella or wild mushrooms are great like this.
GREEN BEANS %26amp; TOMATOES :
Boil or steam the beans for a few minutes.
In a frying pan, put some butter, sliced onions, whole or diced
peeled tomatoes (drained of the juice).
When the liquid you'll get has evaporate a little add the beans, salt and pepper and stir.
Cook on medium heat until the tenderness you like.
RATATOUILLE (for 6 people) :
4 zucchinis
4 bell peppers of different colors
3 eggplants
2 big onions (sliced)
5 crushed garlic cloves
thyme %26amp; bay leaves
1 cup of olive oil
2 big cans of whole peeled tomatoes
salt %26amp; pepper
Diced the vegetables (all of them), not too thick and not thin.
In a pot, put the butter, the sliced onion, crushed garlic.
When the onions are golden, add the peeled tomatoes (drained
the max you can of their juice), the
thyme and bay leaves, salt pepper (a little).
Let the liquid evaporate and then add first the bell peppers,
salt %26amp; pepper ( a little), then 10 minutes after,
the zucchini %26amp; eggplants, salt %26amp; pepper, a little.
You can serve this hot, or very cold as an appetizer
TOMATOES PROVENCALES (fast %26amp; easy) :
Cut the tomatoes in half.
Put a touch of olive oil, salt, pepper and crushed garlic, shredded parsley and
bread crumb (the thin kind) on top of each pieces of tomatoes.
Put in the oven at 400掳 but careful that the tomatoes remain firm and don't overcooked.
FLANK STEAK, SHALLOTS %26amp; VINEGAR :
1 big flank steak (or skirt steak)
tons of sliced shallots
1 1/2 glass of vinegar
butter
salt %26amp; pepper
In a pan, put some butter, then when melted, add the shallots, a little salt %26amp; pepper and
when golden, take them out and put the steak in the pan, salt %26amp; pepper again.
Cook on medium heat. When golden on both size, add the shallots and the vinegar and
let it reduced a little. When you have an homogeneous sauce, it's done.
Serve with a gratin, boiled potatoes, or fresh pasta
SKEWERS :
Diced sirloins steaks
Diced veal or beef liver
Diced green or/and bell peppers
Sliced onions (thick)
Cherry tomatoes
On skewers, slide a piece of vegetable, one of meat, one of liver, etc. Salt and pepper
MUSTARD SARDINES (or Mackerels) :
Cleaned sardines
Onions
French mustard (Maille is better (Walmart), but Grey Poupon will do)
Salt %26amp; pepper
Stuff the fish with sliced onions and spread them with the mustard. Salt %26amp; pepper.
On the barbie
Replace the butter by olive oil, the healthiest oil

BELGIUM ENDIVES :
6 endives
Butter
Salt %26amp; pepper
Boil or steam the endives in water for 5 minutes. Drain them.
In a frying pan, put the butter, the endives very well drained of water, salt and pepper.
Cover them and cook on medium-low heat until cooked as you like your vegetables.
(if the endives are big, you can cut them in half in their lenghts)
CABBAGE %26amp; SALTED PORK :
Boil the cabbage leaves for about 3 minutes (in salty water)
In a pan, put butter, sliced onions, and diced salted pork (cut out the white fat).
Add cabbage. Cook on medium heat
You can also add sliced potatoes, but put them first as they are longer to cook

Check out the South Beach Diet Cookbook! It is basically what they use at Curves as well and if you can also get the South Beach Diet book (from library at same time or buy.) They are both very informative and helpful. I like the crabmeat on mushrooms recipe. No Carbs, which is what you are supposed to stay away from. However, if you are breast-feeding...I lost mine in 3 months by just having eggs, yogurt, veggies and fruit......since I didn't want to harm my baby in any way and he drank all of it out of me. I was like a SKELETON!!! I even joked with a nutritionist friend I know about breast-feeding as a form a weight loss. Just keep pumping once the baby is done and lose weight. We joked about starting this whole weight loss idea. It is true though.....I breastfed for 12 months, then 8 months and then 2 months for my kids and the weight loss was TREMENDOUS!!!! Think about it, you eat for yourself and eat healthy. Your kid drinks it all out of you and you just get skinny in the process. Draining (pumping) the milk would do the same thing. I lost 20 pounds withing 3 months of breastfeeding my two oldest children. Nobody will have the time to do it, or it would be a new weight loss no-no like anorexia or bulimia!
