Easy healthy yummy recipes?

for breakfast or lunch or dinner... even if its so simple.. just gime what u got :) dont go searching the internet though.. i want things that you have TRIED.. thanks xoxoEasy healthy yummy recipes?
I love steaming asparagus and and cooling it. Then I spread a thin layer of fat free herb cream cheese on a piece of reduced fat turkey breast and wrap it around the asparagus. These make super yummy snacks or a few of them can be a tasty lunch. I love oatmeal for breakfast, but I mix it with unsweetened applesauce and dried fruit and nuts to make it extra delicious. I also like to lightly saute spinach in olive oil cooking spray then fry an egg in it. I sprinkle it with garlic powder, balsamic vinegar and fresh tomatoes. A quick healthy dinner that I love is tossing cooked whole grain penne with fresh spinach, tomatoes, cooked chicken, olive oil, herbs, and a little parmesan cheese. I also love to stuff portobello mushrooms with whatever I have around the house that's yummy then bake them. I generally saute onions, garlic, and herbs in olive oil cooking spray then toss them with cooked cous cous or rice and a little skim mozzarella then stuff the mushrooms. I sprinkle them with balsamic vinegar and bake at 350 for 20 minutes or so.Easy healthy yummy recipes?
Chicken Sesame Noodles





100g medium eg noodles


1 tablespoon toasted sesame oil





for the dressing


2 garlic clovees


1cm piece of ginger root, peeled and grated


1 tablespoon toasted sesame oil


1 tablespoon rice vinegar


1 tablespoon soy sauce


1 teaspoon chinese black vinegar


1 teaspoon light brown sugar





100g cooked chicken breast cut into finger sized strips


1/2 cucumber, cut lengthways into strips using a veg peeler


4 radishes sliced


2 handfuls of breansprouts


2 spring onions thinly sliced


1 tablespoon sesame seeds, briefly toasted in a hot, dry frying pan.





Cook the noodles according to the instructions on the packet, drain and refresh under cold water. Toss with the sesame oil and set aside.





Combine the dressing ingredients in a large bowl and stir in the chicken.





Toss the chicken and the dressing with the noodles and scatter over the cucumber, radishes, beansprouts, spring onions and sesame seeds

Sesame Chicken with Spicy Dipping Sauce


1 small minced onion


3 cloves minced garlic


1 (1/4-inch) piece peeled fresh ginger


6 ounces lemon juice


6 ounces olive oil


3 ounces soy sauce


1 tablespoon crushed red pepper


2 tablespoons sugar


2 tablespoon salt


5 chicken breasts


1 cup toasted sesame seeds


2 cups all-purpose flour


Sesame Noodles, recipe follows


Soy Ginger Vinaigrette, recipe follows


Mesclun Greens


Spicy Apricot Sauce, recipe follows





In a food processor, combine the onion, garlic, and ginger and pulse to mince. Place in a bowl and combine with the lemon juice, olive oil, soy sauce,crushed red pepper, sugar, and salt. Shake, or stir well, before use. Cut the chicken breast into 2-inch strips. Put in plastic bag or tub with marinade. Marinate in the refrigerator overnight.


Preheat the oven to 400 degrees F.





Combine sesame seeds with the flour. Dredge marinated chicken strips in the flour-sesame mixture. In a skillet, heat enough canola oil to lightly coat the bottom of the skillet until hot, but not smoking. Cook chicken strips, on both sides until golden brown. Transfer to a shallow roasting pan and finish in the oven.





To assemble:


Toss the Sesame Noodles with some Soy-Ginger Vinaigrette and some fresh mesclun greens. Place the noodle salad on a plate and top with the cooked sesame chicken. Drizzle some apricot sauce over the chicken. Garnish with pickled ginger and a side of the apricot dipping sauce.








Sesame Noodles:


1 pound fresh angel hair pasta


1/2 bunch cilantro, leaves chopped


1 bunch chopped scallions


2 tablespoons olive oil


2 tablespoons toasted sesame oil





Cook angel hair pasta in boiling, salted water for 2 minutes or until al dente. Drain and rinse with cold water to stop the cooking. Add the cilantro, scallions, olive, and sesame oils. Combine well.





Soy-Ginger Vinaigrette:


1/4 cup soy sauce


1/4 cup lemon juice


1 tablespoon minced ginger


1/2 cup olive oil


1/2 cup canola oil


1-ounce boiling water





Combine all ingredients, except for the water, in a blender. Blend for 30 seconds. Then add the water and blend for another 10 seconds.





Spicy Apricot Sauce:


2 cups apricot glaze


1 cup balsamic vinaigrette


2 tablespoons soy sauce


1 tablespoon red pepper flakes


1 tablespoon grated ginger


1/2 cup mirin





Put all ingredients in a saucepan, and heat until the glaze melts. Whisk until smooth, and serve at room temperature. Add water if it gets too thick

Sesame Chicken





* 3 whole boneless chicken breasts


* Marinade:


* 2 tablespoons light soy sauce


* 1 tablespoon cooking wine or dry sherry


* a few drops of sesame oil


* 2 tablespoons flour


* 2 tablespoons cornstarch


* 2 tablespoons water


* 1/4 teaspoon baking powder


* 1/4 teaspoon baking soda


* 1 teaspoon vegetable oil


* Sauce for Sesame Chicken:


* 1/2 cup water


* 1 cup chicken broth


* 1/8 cup vinegar


* 1/4 cup cornstarch


* 1 cup sugar


* 2 TB dark soy sauce


* 2 TB sesame oil


* 1 tsp chili paste, or more if desired


* 1 clove garlic (minced)


* Other:


* 2 tablespoons toasted sesame seeds (see recipe directions for link to how to toast)


* 3 1/2 - 4 cups peanut oil for deep-frying





Preparation:


Directions for Sesame Chicken: Toast the sesame seeds and set aside.





Cut the chicken into 1-inch cubes. Mix the marinade ingredients and marinate the chicken for 20 minutes.





To prepare the sauce: mix together all of the sauce ingredients. Pour them into a small pot and bring to a boil, stirring continuously. Turn the heat down to low and keep warm while you are deep-frying the chicken.





To deep-fry the chicken: add the marinated chicken pieces a few at a time, and deep-fry until golden brown. Drain on paper towels. Repeat with the remainder of the chicken.





Just before you are finished deep-frying, bring the sauce back up to a boil.


Place the chicken on a large platter and pour the sauce over. Sprinkle with sesame seeds. Serve the Sesame Chicken with rice.
for breakfast once i made this sausage-onion-bread-egg fry up..its pretty cool cause im just 14..





basically i sliced sausages,diced onions,and cracked an egg.then i mixed it all up.then i took 1 slice of bread,dipped it in the mixture,then fry the bread(with the mixture on top) on both sides.then i cleaned the oil and ate it with some chili sauce.super yummy,super fast!!





i made a kaya-puff once!kaya is a sweet,custard like asian jam,made from brown sugar,eggs and coconut milk.it has only 31 cal per tablespoon(my fav part!)so i placed 1 tbspn on 1 slice of bread,closed it(like,into a triangle shape) then placed it in the sandwich maker.when its nice and done,the kaya is warm and melted,the bread is crunchy and crispy.yum yum!





my lunch is usually made by my maid,so cant really share any recipes there.





my dinner varies,sometimes its cup noodles(curry or tom yum flavour) or chicken tortillas!
I have many, but can not give you all of them, it would be a lloonngg answer. Grilled chicken breast with a light drizzle of lemon juice(fresh), and some grilled red potatoes with a dash of salt. This could be for lunch and dinner.
