Have any recipes for breakfast foods that are healthy, and look pretty at the same time?

Fruit salad (with yogurt)





Porridge (I think its the Australian version of Oatmeal) often looks dull, but if cooked with milk and with poached fruit it looks nice. (don't forget the spiral of honey).


But you really don't need much to fill you up.





Now I'll get list some breakfast things I know and maybe they sound pretty to you ( they are be heathy or can be)





Muesli


Toast


Beans on Toast (maybe with spinach, tomato, mushrooms, avocado)


Omelette


Scrambled eggs (on toast)


Poached eggs look pretty on toast (go well with beans)


Rice porridge with fruit


Apple crumble (kinda unhealthy due to sugar)


French Toast (no idea how healthy this is, I cant remember how to make it)


A fruit smoothie of some kind could be a nice addition or instead of breakfast (though not as filling) for some (banana smoothies are very tasty)





I myself enjoy Vita-brits with banana or yogurt as well -but that is a cereal from the shelf. (Vitabrits might be only found in Australia though)





Im a vegetarian so you might add meat to some meals like the toast meals.Have any recipes for breakfast foods that are healthy, and look pretty at the same time?
Love breakfast type dishes, and we often eat breakfast for dinner ;) The following is in order of our favorites, but my personal favorite has always been the Crepe, which can be filled with anything ~ savory, sweet, or plain berries (I reduce half of the berries in a small sauce pot with a bit of water and Turbindo sugar to taste, and then add the fresh berries to the reduced syrup after cooking - if using raspberries, etc., use a fine mesh strainer to remove as many seeds as you can BEFORE adding the fresh berries to the pot). They are beautiful topped with a bit of whipped cream, scattered berries, and chocolate shavings/grated.








AMISH BAKED OATMEAL





1 1/2 cups quick-cooking oatmeal


1/2 cup sugar


1/2 cup milk


1/4 cup melted butter or margarine


1 egg


1 teaspoon baking powder


3/4 teaspoon salt


1 teaspoon vanilla extract





Preheat oven to 350 degrees. Grease a 13 x 9 x 2 baking pan. Combine all ingredients together. Spread on prepared baking pan. Bake for 25-30 minutes or until the edges are golden brown. Immediately spoon into a bowl. Top with warm milk, fresh fruit or brown sugar, if desired.





*Notes: We top this with ';sauced apples'; (will try and update this post with my recipe - disappeared from the computer), which resembles apple pie filling, except that it is made with fresh apples, corn starch, sugar (I use Turbindo - natural cane sugar), cinnamon, and is not nearly as sweet.)





Always served with either bacon (turkey bacon is a great alternative for healthful eating) or sausage-n-biscuits w/ red-eye sausage gravy (not healthy at all - oh so yummy!), and scrambled eggs.

KITTENCAL'S FLUFFIEST SCRAMBLED EGGS





Once you make these eggs you will never go back to your old way again, this is the way the higher end restaurants prepare their eggs ----for six eggs you may increase the milk by 1 tablespoon, do not add in more than 1/4 teaspoon baking powder --- if you are not afraid of some extra calories for 4 eggs use 2 tablespoons whipping cream in place of low-fat milk.





2 teaspoons butter (or to taste, can omit and use vegetable spray, the butter is better)


4 large eggs


2 tablespoons milk (low fat milk is okay to use)


1/8 teaspoon baking powder (don't be shy to add in even 1/4 teaspoon)


1/4-1/2 teaspoon salt (or to taste)


fresh coarse ground black pepper


1/2 cup grated low-fat cheddar cheese (optional)





1. In a bowl whisk the eggs vigorously with milk, baking powder, salt and black pepper until very well combined; let stand at room temperature for 5-7 minutes.





2. Heat butter until sizzling over medium-high heat in a large skillet (or spray the skillet with vegetable spray).





3. Whisk eggs again briefly then mix in the cheese (if using).





4. Pour into the hot skillet, stirring constantly with a small heat-proof spatula until they have reached desired consistency (DO not overcook the eggs, they will cook more when removed to a plate!).

CREPES





Will hopefully find time to update this post with my Crepe recipes. If no time permits, search the internet (favorites are any B%26amp;B sites, recipezaar.com, or foodnetwork.com, etc.). One of my favorite things to add is just a bit of orange or lemon zest. Also, the best crepe batter is allowed to rest for a period (1 hour or even 24 hours).Have any recipes for breakfast foods that are healthy, and look pretty at the same time?
