Quick Oatmeal (not instant) can be made in 2 minutes in the microwave. it's healthy, and you can add fruit and nuts to it for flavor adn sweetness (you can also do brown sugar and butter, but you lose a few ';healthy'; points)





Also, bake muffins on the weekend. When cool, freeze. Then take them out one at a time adn nuke to warm up/thaw. Quick and easy.





And an egg cooks in 1-2 minutes. Just crack into a hot, nonstick skillet adn scramble or ';fry.'; Eat on a slice of whole wheat toast, or make an egg sandwich w/ egg, LF cheese, and lean ham or turkey on wheat toast slices or toasted english muffin.Quick, easy, healthy breakfast recipes?

Granola Bites





2 Tablespoons toasted sliced almonds


1-3/4 cups quick-cooking rolled oats


1/3 cup unsweetened, dried apples,


(finely chopped)


1/3 cup unsweetened, dried apricots,


(finely chopped)


1/3 cup unsweetened, dried blueberries,


cherries and/or cranberries


2 Tablsespoons raw sunflower seeds


2 tablespoons unsweetened coconut flakes, preferably organic


1/2 teaspoon cinnamon


1/2 cup Jif creamy peanut butter


1/4 cup honey


1/2 teaspoon vanilla or almond extract





Place almonds and 1/4 cup oats in bowl of food processor; process to fine crumbs, about 15 seconds; place crumbs into a medium bowl; set aside.





In a large bowl, combine remaining oats, dried fruits, sunflower seeds, coconut and cinnamon.





Add peanut butter, honey and extract; combine well until mixture begins to stick together.





Using gloves or moist hands, form mixture into 1'; balls, coat lightly with almond-oat crumbs and place in an airtight container, separating layers with parchment paper or plastic wrap. Refrigerate at least 4 hours or overnight to allow oats to absorb moisture.

Cream Cheese Danish





Ingredients





1 8-oz. pkgs. cream cheese, softened


3/4 cup sugar


1 egg yolk, beaten


2 teaspoons lemon juice


1 teaspoon vanilla extract


1 8-oz. tubes refrigerated crescent rolls


2 cups powdered sugar


4 to 5 Tablespoons milk





Method





Blend together cream cheese and sugar; add egg yolk, lemon juice and vanilla. Set aside. Layer one tube of crescent rolls in the bottom of a greased 13';X9'; baking pan; press together. Spread cream cheese mixture over top; layer remaining rolls on top of cream cheese.





Bake at 350 degrees F. for 15 to 20 minues, until golden. Let cool.





Mix together powdered sugar and milk to a think consistency; drizzle over top. Cut into slices to serve. Makes 15 to 20 servings.

INGREDIENTS (Nutrition)


* 2 eggs %26lt;---------I used 100% liquid egg whites. Aprox. 3/4 cup.


* 1 cup torn baby spinach leaves


* 1 1/2 tablespoons grated Parmesan cheese


* 1/4 teaspoon onion powder %26lt;---------I used much more than this. Eyeballed it.


* 1/8 teaspoon ground nutmeg %26lt;----------Used much more. Eyeballed.


* salt and pepper to taste %26lt;------Did not use.





DIRECTIONS


1. In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.


2. In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.

You could also prepare the mixture at night to cut the time required down by six minutes.

Cereal w/ milk and an orange
1-2 whole grain english muffins with Laughing Cow cheese (I like french onion and garlic herb best) spread on them while hot, so it melts a little. A cup of red seedless grapes, and a glass of skim milk. YUM!
