I am a very busy wife and mom. Before our son was born we weren't the healthiest of eaters. Now that our son is eating what we eat I am trying to create healthy dinners for all three of us. What are your favorite healthy dinner recipes you can share with me? Please list ingredients and measurements if any. Thanks for all your help! I am going grocery shopping next Friday, so I would like to collect as many recipes as I can and make my list for our new healthy dinners.

The best thing is to take one of your already favorite recipes and make it healthier... like add more vegetables to it, replace fatty things with low fat options, replace any white pastas or breads with whole grain, and dont have a lot of sugar. I love doing stuffed peppers with coucous, a little lowfat cheese, vegetables, and if you want, some chicken chunks. Stick with white meats and fish. Also, making a stew is easy... just get some boullion cubes (almost no calories) and dump all your favorite veggies/pasta/chicken in the pot and let it sit for a while! Good luck!
slice 2 shallots
start to sautee them in oil in a wide skillet
put 3 tilapia filets in the skillet, along the sides
slice a few dozen grape tomatoes in half the long way
do the same with a dozen kalamata olives
turn the tilapia filets over when they've browned on one side
then put the tomatoes in the middle
wait a few minutes and put the olives on top of the tomatoes
when the fish are cooked, serve topped with the tomatoes and olives

side dish:
sautee a few tablespoons of chopped carrots, chopped celery and chopped onion (mirepoix) in a sauce pan
toss in 1/2 cup of diced ham, canadian bacon, turkey-ham, turkey - you get the idea
wash a can of white or pink beans and put them in the pot as well, add pepper, and stir
pour in 1 cup of chicken broth and cook until the beans absorb the broth
serve with the fish

finish with a tossed salad --- try chopped belgian endive with pickled beets, and avocado --- a good dressing is 2 tlbspns balsamic vinegar, 1 tblspn olive oil, 1 tblspn dijon
reduce 2 cups of chicken stock in a pan
My boyfriend and I are huge fans of this one:
Chicken Asparagus Stir-fry (serves 2)
1 boneless, skinless chicken breast (cut into 1'; chunks)
1 cup asparagus (fresh or frozen and thawed)
3 green onion chopped
1 tbsp oil
Sauce
2 tsp. reduced sodium soya sauce
1 slice chopped ginger
1 tsp cornstarch
1 tsp dry sherry (optional)
Combine sauce ingredients, place chicken ontop of sauce in bowl. Heat 1/2 oil in wok or pan, stirfry asparagus until tender. Remove from wok and set aside. Heat other 1/2 oil, add chicken, but save as much of the sauce as possible. Once chicken is cooked, add aparagus back into wok and add sauce. Stirfry until done.
I like to serve this with whole grain rice and a cucumber salad (sliced cucumber with about 1 tbsp low-fat yogurt and vinegar added to make it tangy, and dried dill for taste).
I totally know where you are coming from. Here are a couple of things that cook up that are easy and healthy.
Place 4 boneless, skinless chicken breasts in a shallow casserole dish. Season with basil, garlic, and seasoning salt. Pour 1/2 cup california dressing over chicken and bake at 350 degrees for 30 minutes.
I also like to cook chicken breasts in 1/4 cup lemon juice, 1/4 cup greek with feta and oregano dressing, with rosemary, oregano, and garlic to season.
Or, here is an easy slow cooked stew recipe:
1 round steak cut into 1'; cubes (or 1 package stewing beef)
4 medium potatoes
4 large carrots
1 medium onion, chopped
4 celery stalks
1 can tomato soup
1/4 cup woschestershire (not quite sure how to spell that) sauce
1 tbsp beef boullion
season with seasoning salt, garlic, and oregano
Combine all of the prior ingredients in a slow cooker. Cook on low for at least 6 hours. If you do not have a slow cooker, combine ingredients and cook in oven at 175 degrees for 6 hours.
