Autumn Apple Chops
4 Pork, chop, top loin, raw , 3/4-inch think
1 tbsp white all purpose flour
2 tsp unsalted butter
1/2 medium onions , sliced
1 cup apple juice
1 Season flour with a little salt and pepper; lightly flour pork chops and brown on onion side in butter in non-stick skillet over medium heat.
2 Turn chops; stir in onion and apple juice; bring to a boil, lower heat, cover and simmer for 7-8 minutes.

Apple-Lemon Carrots
1 lb fresh carrots , grated (about 4 cups)
2 tbsp Juice, apple, unsweetened, with vitamin C, frozen concentrate, 6 fl ounce can , thawed
1 tbsp fresh lemon juice
1 tsp Margarine, 80% fat, tub (trans fat free)
1 tsp poppy seeds
1 In a nonstick skillet, cook the carrots, apple juice, and lemon juice over medium high heat for 3 minutes (or until the carrots are tender) while stirring constantly.
2 Stir the margarine to coat thoroughly.
3 Sprinkle with poppy seeds.

I love chicken and mushroom risotto
5 cups chicken stock
1/4 cup olive oil
1 brown onion, finely chopped
2 garlic cloves, thinly sliced
200g mixed mushrooms, sliced
2 cups arborio rice
2 large chicken breast fillets, trimmed
50g pecorino cheese, grated
1/4 cup flat-leaf parsley leaves, chopped
Method
Bring stock to the boil in a saucepan over high heat. Reduce heat to low and simmer.
Heat 2 tablespoons oil in a large, heavy-based saucepan over medium heat. Add onion, garlic and mushrooms. Cook, stirring often, for 5 minutes or until tender. Add rice. Cook, stirring, for 1 minute. Reduce heat to low. Add stock, 1 ladle at a time. Stir with a wooden spoon until all liquid has been absorbed. Repeat with remaining stock (see note).
Meanwhile, heat remaining oil in a frying pan over medium heat. Add chicken. Cook for 4 minutes each side or until just cooked through. Remove to a board. Thinly slice.
Add chicken to rice mixture with the last ladle of stock. Cook for 2 to 3 minutes or until heated through. Remove from heat. Add pecorino and parsley. Season with salt and pepper. Stir to combine (rice should be tender but firm in the centre). Spoon into bowls. Serve.

A basic chicken and vegetable stirfry
2 cups Rice
1 teaspoon vegetable oil
250 g chicken breasts skin removed and cut into strips
1陆 Cloves Garlic Crushed
1 medium Onion chopped
2 medium carrots thinly sliced
1 stick Celery sliced
1 red capsicum seeded and diced
125 g snow pea shoots ends and strings removed
1 bunch Bok choy or 1 cup of cabbage, roughly chopped
2 tablespoons reduced-salt Soy sauce
1 tablespoon Sweet Chilli Sauce
Method
Cook rice following packet directions.
While cooking, heat oil in a wok or large pan and stir-fry chicken until almost cooked. Set aside.
Add garlic, onion, carrots, celery and capsicum to the wok and cook for 2 minutes. Return chicken to the pan, add snow peas and bok choy and cook for 2 minutes.
Add soy sauce and chilli sauce, stir.
Pour into stir-fry and heat through
You can even substitute rice for noodles, or chicken for pork or beef
Or Pasta Bake
1 lb Pasta, penne, rotini or shells
1 tbsp Oil, vegetable
1 Onion, chopped
1 can Tomatoes, 28 oz, crushed
1 tsp Oregano, dried
1 cup chopped mushrooms
1 cup spinach leaves
Salt %26amp; Pepper to taste
2 cup Cheese, grated, any type
method
1. Preheat oven to 325掳f.
2. Cook pasta on stove and drain.
3. Meanwhile, heat oil in saucepan. Add onion and garlic, saut茅 till soft (about 5 minutes).
4. Add tomatoes, oregano, mushrooms, spinach, salt and pepper, cook till heated through, about 5 minutes.
5. Combine cooked pasta, sauce and 1/2 cups grated cheese in ovenproof dish.
6. Sprinkle remaining cheese on top.
Bake 15-20 minutes at 350掳f.
you can reduce oil, add extra veg if needed
OR I LOVE (taste great cold the next day, chicken and corn fritters)
2 1/2 cups shredded cooked chicken
310g can corn kernels, drained
1 small red capsicum, finely diced
1/2 bunch English spinach, leaves shredded
2 tablespoons plain flour, sifted
6 eggs, lightly beaten
1/4 cup olive oil
Preheat oven to 160掳C. Place chicken, corn, capsicum and spinach in a large bowl. Stir in flour and eggs. Season with salt and pepper. Mix well.
Heat half the oil in a large, non-stick frying pan over medium heat. Using 1/4 cup of mixture per fritter, spoon mixture, 3 fritters at a time, into hot oil. Cook for 3 to 4 minutes each side or until golden and firm to touch in the centre, adding remaining oil as required. Transfer to a wire rack over a baking tray lined with paper towel, to drain. Keep warm in oven while cooking remaining fritters.
I usually subsitute chicken for tuna, but either way they are delicious
Loco Moco is a favorite dish in Hawaii.
You form hamburger patties and fry them.
In the mean time, make some brown gravy from packages (McCormicks works the best).
Put the cooked the patties over rice.
Fry eggs sunny side up. Place eggs on top of the patties.
Add fried onions if you desire
Cover in brown gravy and enjoy!

Quick and easy to make, and great when your on the run with the kids, or if things are hectic and you need something for supper last minute. These are enjoyed by young and old, and good any time you are in the mood for something sloppy and delish!
Sloppy Cheeseburger Joes
Ingredients
1 lb ground beef
2 teaspoons instant minced onion
1/2 cup ketchup
1 teaspoon mustard
1/4 teaspoon salt
1 dash pepper
8 slices American cheese or of your favorite cheese (I like the lg. Velveeta slices)
12 slices dill pickles
4 hamburger bun
Directions
1 Cook beef and onion in large skillet over med-high heat until no longer pink. Drain.
2 Stir in ketchup, mustard, salt and pepper.
3 Cook for 1- 2 minutes or until hot.
4 To serve, divide the meat mixture into 4 servings, then spoon onto the bottoms of the 4 rolls.
5 Top each roll with 2 slices of cheese and 3 pickle slices.
6 Top each with the top half of the roll and serve.

Amish Meatloaf
Ingredients
Meatloaf
2 lbs ground beef
2 1/2 cups crushed Ritz cracker
1 medium onion, chopped
2 eggs
2 slices bacon
3/4 cup ketchup
1/4 cup brown sugar
Sauce
1 cup ketchup
2 tablespoons white vinegar
3/4 teaspoon salt
2 tablespoons yellow mustard
1/2 cup brown sugar
Directions
Preheat oven to 350.
Mix all meatloaf ingredients, except bacon.
Press into loaf pan and top with bacon.
Bake for 1 hour.
Mix sauce and spread over top during last 15 minutes of baking

A beef and hominy bake topped with shredded cheese. An easy casserole, made with ground beef, cheese, chili with beans, and hominy.
INGREDIENTS:
1 pound ground beef
1/2 cup chopped onion
1 can (16 ounces) chili with beans
2 teaspoons chili powder
1 can condensed cream of chicken soup
1 (20 ounce) can (2 1/2 cups) yellow hominy, drained
2 tablespoons sliced ripe olives
2 cups shredded process cheese, or Velveeta
Cook ground beef and onion till meat is browned. Stir in remaining ingredients, except the cheese. Spoon beef and hominy mixture into 2-quart casserole. Cover; bake at 350掳 for 25 minutes. Sprinkle cheese over top; continue baking, uncovered, for 5 to 10 minutes longer.

Chicken Pot Pie - also very delicious;
1 pound chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk
2 (9 inch) unbaked pie crusts
Preheat oven to 425 degrees F (220 degrees C.)
In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

Southwestern Ranch Salad
1 pkg. pre-cut salad mix
陆 cup shredded sharp cheddar cheese
1 cup ranch flavored croutons
陆 cup ranch flavored almond salad topping
Hidden Valley Spicy Ranch dressing
Salt and pepper to taste
Toss all ingredients together. Serve immediately.
Caesar Coleslaw
1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing
Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!
Sesame Ranch Salad
1 pkg. salad mix
陆 cup toasted sesame seeds
6 strips bacon, fried, crumbled
陆 cup grated swiss cheese
Toss all ingredients together with creamy ranch salad dressing.
Chinese salad
Dressing Ingredients:
2/3 cups oil
1/2 cup sugar
1/4 cup cider vinegar
Ramen package flavoring
Salad Ingredients:
1 pkg. coleslaw mix
1 bunch green onions (chopped)
1/2 cup sesame seeds
陆 cup sliced almonds
1 pkg. chicken ramen noodles (broken up, with seasoning)
Mix dressing ingredients. Refrigerate until you鈥檙e ready to serve. Toast sesame seeds, almonds, and ramen noodles in 350 oven until toasted. Mix salad ingredients. Add toasted ingredients, dressing and toss.
Variation: Use broccoli slaw
this is super easy, the only thing is it may take a bit to cut all the veggies. after that it's smooth sailing! it good hot, room temp, and even cold. you'll be amazed at all the flavor it has! my husband is the biggest meat eater ever, but CONSTANTLY requests this meatless dish. it seems like a lot of vegetables (about 2 cookie sheets) and sometimes i even add a little more than called for, but they really shrink down. make sure to use a good quality parmesan, as it is a key flavor component.
Pasta Primavera
3 carrots, peeled and cut into thin strips
2 medium zucchini or 1 large zucchini, cut into thin strips
2 yellow squash, cut into thin strips
1 onion, thinly sliced
1 yellow bell pepper, cut into thin strips
1 red bell pepper, cut into thin strips
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1 tablespoon dried Italian herbs or herbes de Provence
1 pound farfalle (bowtie pasta)
15 cherry tomatoes, halved
1/2 cup grated Parmesan
Preheat the oven to 450 degrees F.
On a large heavy baking sheet, toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer half of the vegetable mixture to another heavy large baking sheet and arrange evenly over the baking sheets. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.
Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan.

Check out the sealed PRE-COOKED meats such as beef tips, roast with gravy, pork roast, chicken, baked ham, pork chops, meatloaf.
Just pop into your microwave; directions are on the packages.
You will find these packages in the cold section (not the freezer). Ask a clerk to help you find them.
Use this for your meat dish, with a side dish or two of vegetables, rice, or potatoes which can all be found on shelves dry or canned, or in the freezer section and they are already cooked. All are delicious.
Canned fruits make wonderful desserts. My husband has canned sliced pears EVERY night. lol
Run over to the deli section of your grocery store and pick up a roasted or fried chicken. The deli will also have side dishes.
There are many plastic tubs of all types of shaved meats for sandwiches...my favorites are baked ham, roast beef, but there are many more to choose from. Pile the meat on bread or rolls, add tomatoes and lettuce. Yummmmm!

We go a step further...during the hottest part of summer, we use the stiff type of paper plates as often as possible. Just throw away, no clean up.

If you get more into spices, then you'll find that even ';boring'; vegetable or chicken dishes become a lot more exciting - so you wouldn't need to eat as much fried/sweet/fatty stuff to enjoy your food.
