I would love some easy healthy yummy dinner recipes!?

Some easy ones to make up for my hubby and me which are healthy as we are trying to lose weight =)I would love some easy healthy yummy dinner recipes!?
My favourite : BBQ 'sandwich' for vegetarians......





you will need





Onions sliced Cauliflower flowerettes


Mushrooms sliced


Wostershire sauce 1-2 tblsps Pita bread/mountain bread or the like.


Crisp crunchy salad vegetables (carrot grated, lettuce, sprouts, celery etc)


Lite mayonaise





Onions and Mushrooms - Spray a pan with a little oil and cook together, when they are about half cooked add Wostershire Sauce and continue until cooked to how you like.





While they are cooking gently steam Cauliflower flowerettes until just tender.





Warm pita breads in oven for a minute or two, then assemble your sandwich with salad, cauliflower, mayonaise and mush/onions.


These really taste fantastic, are really filling and also travel well so make great lunches. Also if you want you can cook steak up with the Mushrooms and onions to make it more hearty.

I love pitas, I don't know what kind of diet you are on but we eat them all day long here and I love that I can use it with lunch, dinner and snacks. I make little stir frys and lay it over a warm pita for a wrap and it's really filling- even if you don't use any meat. You don't have to use much sauce or oil if you get a good tasting flatbread like the garlic Naan. And you can cook your chicken ahead of time and cut it up so when the veggies are ready you can just toss it in. Another idea I use a lot is a simple pasta- I buy a few jars of organic pasta sauce and use whole wheat noodles with chicken and throw some fresh veggies on the grill (or the george foreman) to go with it. Best advice to you that I have learned when trying to lose weight is to prepare everything ahead and have fun cooking, so when you sit down to eat it is enjoyable and fills you up. Good luck!
CREAMY MARINARA ROTINI WITH BEEF (or chicken breast, if you prefer)





4 oz. whole wheat rotini


1/2 small green, diced


1/4 medium yellow onion, sliced into strips


1/2 lb. Lean Steak (preferably sirloin, though shoulder steak/London Broil would work, too)


3/4 cups marinara sauce


1/4 cup skim milk


1 tbsp grated parmesan cheese


1/2 tbsp olive oil


Garlic powder


Rosemary leaves


Ginger


1 egg white





-Preheat oven to 375F. Generously cover steak in garlic and rosemary, cook for 45 minutes


-Meanwhile, bring water in a saucepan to a boil. Add rotini, cook until tender (about 15 minutes). Rinse 2-3 times with cold water to prevent sticking. Set aside in a bowl.


-Wipe any leftover starch out of the saucepan. Reduce heat to medium/low (if your oven has a 1-9 scale, reduce heat to a 3). Pour in olive oil and cover generously in garlic. Add onion and green pepper, cover again in garlic, and stir. Heat, stirring occasionally, until vegetables are soft, then add marinara sauce and milk. Cover generously with ginger. Stir frequently. Reduce heat if sauce starts bubbling.


-Once the sauce is hot, dice the steak and stir it into the sauce. Add parmesan cheese, stirring continuously until well integrated.


-Whisk egg whites until texture is consistent. Slowly add to sauce, stirring continuously for at least a minute. Continue to stir very frequently.


-Give the sauce about 5 minutes to fully cook (remember to stir frequently!), then add rotini to the sauce. Rotini should still be somewhat warm from when it was cooked earlier, so it should need only a couple minutes to heat back up in the sauce.


-Enjoy!
Chicken and Brown Rice--easy





I marinatein zesty italian dressing and bake/broil my chicken tenders until done(no batter)once they are done, I shred them, just like for chicken enchiladas. Then I cook my brown rice, mix it all together and then add soy sauce to taste.
try different types of salads. Fish is also a good option. Stick to grilling, steaming and baking as opposed to frying etc which tends to need extra fats and oils. Good luck!
