Anyone have good, healthy, slow cooker recipes?

I am looking for some healthy slow cooker recipes. It's getting cold and days are getting shorter...hate to spend all evening cooking. Here is the catch....not so big on veggies. I know, that's awful...but it is true. Some veggies for flavor is fine but as main ingredients it's a no go.Anyone have good, healthy, slow cooker recipes?

I just made chicken %26amp; sausage gumbo - but that has quite a bit of veggies.





Pulled pork - basically you cook a pork loin after browning it, then pull it and put bbq sauce on it.Anyone have good, healthy, slow cooker recipes?

Mushroom Chicken





4 chicken breast


1 can cream of mushroom soup


water





Mix a can of cream of mushroom soup with can of water.


Place chicken in crock pot.


Pour soup over chicken and cook on medium ....4-5 hours....or until desired doneness.





Old Settler's Beans





INGREDIENTS:








1/2 lb. ground beef


1/2 lb. bacon


1 chopped onion





Brown in skillet and drain excess grease.





ADD:





16 oz.can Red Kidney Beans (drained)


24 oz. can Pork %26amp; Beans (drained)


1/2 cup white sugar


1/2 cup dark brown sugar


1/4 cup Catsup


2 TBLS. Molasses


1/2 tsp. dry mustard





Mix Thoroughly !





Cook in a crock pot until...hot...hot...hot!








Stuffed Peppers for 2


(Can be doubled, tripled..etc.)





Mix together:


1/2 lb.Hamburger (or gr. turkey)


a pkg. of onion soup mix


3/4 of 1 small can tomato paste.


1/2 cup rice





Prepare peppers.....cut off top and take out seeds.





Fill with meat mixture. Place in an oven proof dish/pan that has a lid.


Place any extra meat mixture in bottom of pan or make a couple of patties %26amp; freeze for future use.





Mix remaining tomato paste with can of tomatoes (crushed....diced...etc. whatever you want to use.)





Pour tomatoe mixture around peppers, cover and bake in 375 degree oven for 1 hour.





Serve with cornbread or garlic bread.





POT ROAST


Your choice of beef or pork(to fit crock-pot)


1 pkg. dry Ranch dressing mix


1 pkg. dry Italian dressing mix


1 pkg. dry Brown Gravy mix


1 cup water


Put beef in pot.


Mix together all the dry mixes鈥?then add water 鈥our over meat and cover %26amp; cook on high 4-6 hours.


Until meat is tender.


The first time I made it I didn鈥檛 have the Italian Dressing mix鈥?so I added a pkg. of Onion Soup Mix鈥?I have to say I liked that better.


If you use more water you might want to add more Brown Gravy mix鈥?to make a thicker sauce. Was gonna add


potatoes and carrots鈥ut never got around to it.

Whatever cans of veggies I have, that I like, in cabinet it goes in the pot.....along with all the juices in the cans.


Cook on stove top or Crock pot.


Enjoy!





Canned:


corn


peas


carrots


gr.beans (any variety)


lima beans


wax beans


tomato (any variety)


potatoes (whole or sliced...or both whatever you like)





You get the idea....lol.





Also add a package of shredded cabbage (cole slaw mix).


You can even add a package of onion soup mix.


If it gets too dry and needs more liquids....add tomato juice...V-8...etc.

Mix one can of good baked beans


We use a good sized can of beans (14-16 ounces, I think) and


get a kind that we like (maybe with brown sugar, onion, and bacon).


There are several kinds of good baked beans.





and a package of Oscar Meier Weiners (all sliced up).





with a can of whole kernel corn (drained)





Any way, heat up these three ingredients, and serve with brown bread


(maybe toasted ?) and a glass of milk.





It doesn't get any easier than this, and is suprisingly good!

1.)Might put ingredients in a casserole dish and top with corn muffin mix.


2.)Use a pound of cooked gr. beef or gr. turkey or cooked Jimmy Dean w/sage sausage or some smoked sausage.

EASY BEEF STROGANOFF








3/4 lb ground beef


1 jar Heinz HomeStyle Savory Beef Gravy (12 oz Jar)


1 can mushrooms, drained (7 oz can)


1/2 cup sour cream


4-6 cups hot cooked noodles


salt %26amp; pepper, to taste





Instructions:


In a medium skillet, cook ground beef over medium heat until browned and thoroughly cooked. Carefully drain liquids and return to stovetop. Stir in Gravy and mushrooms, and bring to a simmer, stirring occasionally. Remove from heat and stir in sour cream, until thoroughly combined. Add salt and pepper, to taste, and serve immediately over hot noodles.
Crockpot Teriyaki Steak





Ingredients





1. 2 1/2 lb Boneless chuck steak


2. 2 tablespoons Oil


3. 1 t Ground ginger


4. 1/2 c Soy sauce


5. 1 tb Sugar


6. 1 Clove garlic crushed





Cut steak into 1/8-inch thick slices. Combine remaining ingredients


in a small bowl. Place meat in a crock-pot. Pour sauce over. Cover


and cook on low for 6 to 8 hours. Serve with rice.... Makes 5-6

Nacho Cheese Chicken Chowder


Ingredients


1 lb. skinless, boneless chicken breast halves, cut into 1/2-inch pieces


2 14.5-oz. cans Mexican-style stewed tomatoes


1 10.75-oz. can condensed nacho cheese soup


1 10-oz. pkg. frozen whole kernel corn (2 cups)


Shredded Mexican-style or cheddar cheese


In a 3-1/2- or 4-quart slow cooker, stir together chicken, undrained tomatoes, soup, and corn.





2. Cover and cook on low-heat setting for 4 to 5 hours or on high-heat setting for 2 to 2-1/2 hours. Sprinkle each serving with cheese. Makes 6 servings

Crockpot Turkey Meatloaf





Ingredients:


鈥? Tbsp. olive oil


鈥? onion, finely chopped


鈥? cloves garlic, minced


鈥?/3 cup milk


鈥?/4 cup horseradish


鈥? Tbsp. chili sauce


鈥? eggs


鈥?/2 tsp. salt


鈥?/8 tsp. white pepper


鈥? tsp. dried marjoram leaves


鈥? garlic cloves, minced


鈥?/4 cup minced fresh parsley


鈥? cup soft fresh whole wheat breadcrumbs


鈥?-1/2 lbs. ground turkey


Preparation:


In medium pan, cook onion and garlic in olive oil until tender. Place in large bowl with all ingredients except turkey and mix well. Add turkey and mix gently just until combined.





Tear off 2 30'; pieces of heavy duty aluminum foil and fold to make two 2';x30'; strips. Lay strips in bottom of crockpot in an X pattern, letting the edges hang over the crockpot. Form turkey mixture into a loaf that will fit into the crockpot. Place on top of the foil strips.





Cover crockpot and cook on low for 7-8 hours, until meat thermometer registers 170 degrees. Drain off fat as needed during cooking time using a turkey baster. Use foil strips to lift meatloaf out of crockpot when it reaches 160 degrees F on a meat thermometer. Cover and let stand 20 minutes before slicing. 8 servings
Pot Roast is my favorite


What you need:


1-4 lb. roast (or whatever will fit in your cooker)


potatoes (optional)


baby carrots (optional)





Wash the carrots and potatoes. Season pot roast with salt/pepper. Place roast at the bottom. Cover with potatoes and carrots. Cook on high for 4-5 hours or low setting for 8-10 hours. Make sure potatoes are fully cooked. You might want to marinate the roast with it's own juices every hour or so. Easy and delicious. You can also add some BBQ sauce in the last 1/2 hour and you got easy BBQ sandwhiches just shred the meat and throw it on a hamburger bun.

Middle Eastern Meat Loaf


Yields: 8 鈥?10 servings





Of all the meat loaf recipes available, I think this one is my favorite. It is inspired by a middle eastern recipe using ground beef. Let me tell you right now that this meat loaf is sweet. It is probably the sweetest meat dish I have ever eaten and yet it works well. I have served this up to several friends and they have ALL asked for the recipe. There are quite a few ingredients, but please, don't let this put you off. Most of the ingredients are things you will have already, and this does make a quite outstanding meal. A meal you would be proud to serve to guests. A most delicious crock pot meal 鈥?So give it a try.





2录 pound ground beef (mince meat)


2 onions finely diced


3 teaspoon crushed ginger (we used ginger out of a bottle)


3 teaspoon crushed garlic (we used garlic out of a bottle)


2 teaspoon cumin (or alternatively curry powder)


1 teaspoon nutmeg


1 teaspoon cinnamon


1 tablespoon white wine vinegar


陆 cup honey


陆 cup sultanas


陆 cup tomato paste


3 cups bread crumbs


陆 cup plain flour


陆 cup parsley (finely chopped)


陆 cup mint (finely chopped)


3 eggs (lightly beaten)





Make two long strips of aluminum foil, long enough to sit in the crock pot and overhang at sides. Place them in the crock pot so that they form a cross on the bottom of the pot. When the meat loaf is cooked you will use this to remove it from the crock 鈥?so make sure the ends are long enough to gather on top of the loaf.





Place all ingredients in a very large mixing bowl. Mix with hands (yes 鈥?will need to get those hands dirty for this one) until well combined. Shape with hands into a large round meatloaf about 陆 an inch smaller than your crock pot.





Place loaf into crock pot, on top of the aluminum foil strips. An ensuring loaf is not touching sides of crock.





Cover and cook for 8-10 hours on Low OR 5 hours on High. Remove from crock pot using aluminum strips as handles. Cut into slices and enjoy with roast vegetables or steamed vegetables and mashed potato.





Notes





Absolutely delicious. Everyone who has tried it has asked for the recipe. Also fantastic served cold the next day.

Split Pea Soup


Yields 8 Servings





1 (16 ounce.) pkg. dried green split peas, rinsed


1 meaty hambone, 2 ham hocks, or 2 cups diced ham


3 carrots, peeled and sliced


1/2 cup chopped onion


2 ribs of celery plus leaves, chopped


1 or 2 cloves of garlic, minced


1 bay leaf


1/4 cup fresh parsley, chopped, or 2 teaspoons dried parsley flakes


1 tablespoon seasoned salt (or to taste)


1/2 tsp. fresh pepper


1 1/2 quarts hot water





Layer ingredients in slow cooker in the order given; pour in water. Do not stir ingredients. Cover and cook on HIGH 4 to 5 hours or on low 8 to 10 hours until peas are very soft and ham falls off bone.





Remove bones and bay leaf. Mash peas to thicken more, if desired. Serve garnished with croutons. Freezes well.

Beef Tips and Noodles





I make this in the crock pot all the time. Actually made it last night, haha. Anyhow use only 1/2 cup water and cook on low 8 hours or high for 5. Oh, you can also use onions soup mix instead. (still wonderful) Also I serve this with rice. Another thing you can sub the sirloin with boneless beef ribs or stew meat (as I do)





1 pound sirloin tips, cubed


1 (10.75 ounce) can condensed cream of mushroom soup


1 (1.25 ounce) package beef with onion soup mix


1 (4.5 ounce) can mushrooms, drained


1 cup water


1 (16 ounce) package wide egg noodles





Preheat oven to 400 degrees F (200 degrees C). In a 13x9 inch casserole dish, combine the mushroom and beef onion soups, canned mushrooms and water. Mix thoroughly and add beef tips. Turn to coat well.





Bake in a preheated oven for 1 hour. While beef tips are baking, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes

Moroccan Brisket with Red Onions and Apricot Couscous


Yields: 4 servings





1 large red onion, sliced into thin wedges


2 parsnips, chopped


2 pound boneless beef brisket


Salt and freshly ground black pepper


2 teaspoons ground coriander


2 teaspoons ground cumin


1/2 teaspoon ground cinnamon


1/2 teaspoon garlic powder


Pinch nutmeg


1 cup whole dried apricots


1 cup dry red wine


1/2 cup reduced-sodium beef broth


2 tablespoons honey


1 cup couscous


1/4 cup chopped fresh cilantro leaves





Arrange onion wedges and parsnips in bottom of slow cooker. Season beef all over with salt and black pepper. In a small bowl, combine coriander, cumin, cinnamon, garlic powder, and nutmeg. Rub spice mixture all over beef. Arrange beef over onions and parsnips in slow cooker. Arrange apricots around beef.





In a small bowl, whisk together wine, broth and honey. Pour mixture over beef and vegetables. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.





Cook couscous according to package directions. Serve beef, vegetables and apricots over couscous. Pour over extra sauce from slow cooker and top with cilantro.
