Mine has always been and I hope always will be Salads - at least until I find something that is as healthier as my current choice! There was a time when i believed Salads were boring combination of veggies, but not as I have managed to compile a lot more recipes on variety salads, things have pretty much changed since then.

I make sure that my day's menu has space for salads at aleast once - now the choice lies with me, if i need to choose from plain salads, fruit salads, bean salads, pasta salads or even chicken salads. Although the choice depends a lot on my mood, there's no way i compromise on the nutritional values. I throw in all my favorite fruits and veggies, also try out their combinations with pasta and chicken (shredded).

If you're really in for a healthy diet, salads will be a great choice to make. Having said so, you will sure find out the result in about a week or two! :)

Bread (I like focaccia bread, but you can use anything), sliced tomatoes, provalone cheese, and chopped basil. Grill, enjoy.

Diced tomatoes, fresh mozzarella (not that shredded kind), fresh basil leaves, olive oil, balsamic vinegar. Toss, enjoy.

Beef steak, potatoes, cauliflower. Grill steak. Chop potatoes, cut cauliflower into bite-sized pieces. Put potatoes/cauliflower on cookie sheet, drizzle with olive oil. Cook at 350 for about a half hour, or until potatoes are sizzling and cauliflower is browned. Enjoy.

The important thing to remember for dieting is to (A) make it a habit, not something you're going to do for the next month and then quit - it should be the new way you live your life; (B) it doesn't matter what's in it so much as how much of it you have. A good strategy I've found is to just listen to your stomach - you did it when you were a kid, and you should develop the skill again. When you're not hungry, don't eat. Pack something if you think you'll be hungry later, but don't force yourself to eat (or eat too much) if you're not hungry. Learn to stop when you're pleasantly full, as well. Saves you money if you have more leftovers. :)

Best of luck! :)
I love to make a pot of the Barilla Pasta Plus and add extra virgin olive oil to it. This makes it not stick together. Then throughout the week, I can make Puttenesca or pasta with chicken or pasta with roasted veggies and shrimp. I just take out what I need for the meal. It's a better pasta for you with Omega 3s and more proteins than regular pastas. It's about 1.50 a box, but one box goes a long way as it's also a denser pasta.

I drain, but don't rinse the pasta, then throw in a bowl with oil and gently stir until it's cool. Then I refridgerate it. Use real evooil, as it's better for you.
