Anyone got potato recipes (healthy)?

Potatoes are very healthy its just what you put on them. I like to add chicken broth to a bakes potato instead of butter to lower the fat and tons of calories then top it with some good homemade chili. Here's a few more recipes for you to try.





Home made baked Jo Jo's


1 potato per person


Mrs. Dash garlic and herb seasoning


Pam





Pierce and microwave the potatoes for each person. Carefully remove the potato from the microwave and cut the potato lengthwise into wedges (I quarter them). Place the wedges on a cookie sheet, sprinkle with Mrs Dash and lightly spray with the Pam. Broil wedges until lightly browned about 3 to 4 minutes, watching closely.





Carole’s Potato Cakes

4 c. left over mashed potatoes


4 eggs


2 c. flour


1 c. milk


Salt and pepper to taste





Combine all ingredients in a large bowl. Mix well with your hands. Carole tells me this is imperative that you use your hands!


Ina well oiled Dutch oven, or on a lid, fry over high heat until golden brown, about 2 minutes each side. Serve hot with brown gravy.

You Pick the Meat Pot Pie

1 lb. any meat you want in the pie, turkey, chicken, beef, etc.


2 qt water


1 medium onion, chopped


1 c. celery, chopped


8 oz. frozen vegetables, any style


2 potatoes, cut into 1/2'; cubes


1 c. frozen peas


1 Tbs. granulated garlic


1 tsp. celery seed


1/8 tsp. black pepper


2 Tbs. bouillon in the flavor of the meat you are using


1 c. milk


3 Tbs. flour


4 Tbs. butter, melted





2 c. Bisquick


½ c. water





Combine the first 11 ingredients in a 12” Dutch oven and bring to a boil. Cover and reduce heat and simmer for 30 minutes. Remove lid and add milk, stir well. Combine melted butter and flour to make a roux. Stir roux into the pie mixture to thicken, simmer 15 to 20 minutes more.


While the pie is simmering, mix together Bisquick and just enough water to make a soft dough. Turn the dough out on a floured board and roll to a circle to fit inside the Dutch oven. Carefully place the dough on top the pie mixture. Bake in Dutch oven at 350o for 20 to 30 minutes longer. Serve





Brown Vegetarian Stew





2 onions, sliced


2 stalks celery, sliced


2 carrots, or other root vegetables such as turnips or parsnips, peeled and


sliced


3 potatoes, peeled and sliced


1 green bell pepper, cut into strips


1/2 lb. mushrooms, quartered


2 cups water


¼ cup Soy sauce


¼ cup tomato juice


½ Tbs. grated fresh ginger


½ tsp. dried marjoram


½ tsp. dried thyme


½ tsp. paprika


2-3 cloves garlic, sliced


3 to 4 Tbs. cornstarch mixed with ½ cup cold water, for a slurry





In a Dutch oven combine all ingredients but the cornstarch slurry. Bring to a boil, reduce heat and simmer for one hour, until vegetables are tender. Add the slurry, stirring consistently until thickened. Add any other vegetables you like to your stew. Serves 6





ok so this one isnt so healthy but the garlic and parsley make up for it!


Garlic French Fries





1 bag frozen French fries


1 qt. vegetable oil


1 cube butter, melted


¼ cup minced garlic


1 tsp. granulated garlic


¼ cup fresh parsley, finely minced





Heat oil over medium heat to 365° in a 10” deep or 12” Dutch oven. Carefully drop a handful of fries into the oil and fry until lightly browned. With a draining scoop (spider) remove the fries and place in a medium bowl. Add the granulated garlic to the melted butter and stir to combine. Sprinkle a good amount of fresh garlic over the French fries. Then coat lightly with garlic butter. Toss fries well and sprinkle a little parsley over the fries to garnish/ Serve hot on a plate. Continue the process until the fries and other ingredients are used up. Serves 6 to 8

Potato Salad





* 2 pounds small red potatoes, quartered


* 5 hard-cooked eggs


* 3/4 cup fat-free mayonnaise


* 2 teaspoons cider vinegar


* 1 teaspoon sugar


* 1 teaspoon ground mustard


* 1/2 teaspoon salt


* 1/4 teaspoon pepper


* 1 large sweet onion, chopped


* 2 celery ribs, chopped


* 1/2 cup chopped green onions


* 1/2 cup julienned sweet red pepper


* 1/4 cup minced fresh parsley





1. Place the potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 12-14 minutes or until tender. Drain; cool for 30 minutes.


2. Slice eggs in half (discard yolks or save for another use). Cut the whites into 1/2-in. pieces.


3. In a large bowl, combine the mayonnaise, vinegar, sugar, mustard, salt and pepper. Add the potatoes, egg whites, onion, celery, green onions, red pepper and parsley; toss to coat. Cover and refrigerate for 2 hours or until chilled.Anyone got potato recipes (healthy)?

sweet potato and sausage soup








This hearty soup gets rich flavor from linguiƧa, a delicious pork sausage from Portugal seasoned with garlic, paprika, and other spices. Spanish chorizo sausage is a great substitute.








Ingredients


2 tablespoons extra-virgin olive oil,


1 10- to 11-ounce fully cooked smoked Portuguese linguiƧa sausage or chorizo sausage, cut crosswise into 1/4-inch-thick slices


2 medium onions, chopped


2 large garlic cloves, minced


2 pounds skinned sweet potatoes (yams; about 3or 4 large), peeled, quartered into 1-inch-thick pieces


6 cups low-salt chicken brot


1 9-ounce bag fresh spinach





Preparation


Heat 2 tablespoons oil in heavy large pot over medium-high heat. Add sausage; cook until brown, stirring often, about 8 minutes. Transfer sausage to paper towels to drain. Add onions and garlic to pot and cook until translucent, stirring often, about 5 minutes. Add all potatoes and cook until beginning to soften, stirring often, about 12 minutes. Add broth; bring to boil, scraping up browned bits. Reduce heat to medium-low, cover, and simmer until potatoes are soft, stirring occasionally, about 20 minutes. Using potato masher, mash some of potatoes in pot. Add browned sausage to soup. Stir in spinach and simmer just until wilted, about 5 minutes. Season with salt and pepper.
Spanish bean soup:


1 Pkg dried garbonzo beans


2 cans garbonzo beans


4-5 potatos


pkg vigaro spanish rice seasoning


pkg chopped ham pieces or any left over ham





soak dried beans overnight if possable


add cubed potato


2-3 packets rice seasoning


ham pieces


cook until beans are soft and potatos are done


mash or blend canned beans and add to thicken


serve with french bread for dunking
Bake a whole sweet potato. Top it w/ a little tub margarine, dash of salt, and a dash of cinnamon. That's about as healthy as you can get!
