Thengai Mangai Pattani Sundal





It is a tasty evening snack, also called chundal, rich in protein.


Ingredients:


Dry green peas (pattani): 2 cups


Raw mango (mangai / kachcha aam): 1


Coriander seeds( malli / dhania) : 4 tsp


Coconut (thengai / nariyal): 1/4 cup


Mustard (kadugu / rai / sarson): 1/4 tsp


Red chili (vara milakai / lal mirchi): 8


Asafetida (Perungayam / Hing): one pinch


Husked black gram (Ulundham paruppu / Urad dal): 1 tsp


Oil: 1 tsp


Salt: 1 tsp





Method


Soak peas overnight in four cups of water, pressure cook in medium flame for two whistles, strain the excess water and keep it aside. Grind coriander seeds, coconut, and red chilies. Fry mustard, black gram and asafetida in oil and add the ground masala. Keep frying until a pleasant flavor comes out. Now add peas and salt. Cook for a few minutes. Remove from flame. Garnish with chopped mangoes. Serve hot or cold. Suitable to serve during festivals like Navarathri and Ayudha puja / Saraswathi puja. During non season of mangoes, mango powder can be used effectively.
pasta salad with tuna





1 cucumber diced


1/2 carrot diced


1 cup corn


1 tin of Serena Tuna ( i prefer chilli and oil )


1 cup of pasta ( any type ) boiled


2 tbs of lemon juice


1 tsp of salt


2 tbs of olive oil





and i add heaps of parsley chopped up really fine.


it gives it a unique taste! im a hugh parsley fan :-)





mix all ingredients together and...





i know this sounds more like a meal than a snack.


you can use it either way, just store left overs in a container in the fridge.

Apple Chips





1 cup of sugar


1 cup of water


1 whole granny smith apple, un-cored and thinly sliced into rounds.





Bring sugar and water to a boil, without stirring. Once sugar has dissolved, simmer for 5 minutes. Let cool.





Soak apple slices in the cooled simple syrup for a minimum of 20 minutes or overnight.


Preheat oven to 300.





Drain apples and place on a non-stick baking sheet. Bake until golden and crispy.
Strawberry soy smoothies





Brie cheese with any kind of fruit





I just tried a new recipe last week... a veggie ';pizza';. Place a flour tortilla on a cookie sheet. Top with sauteed onions and green peppers. Place fresh tomato slices over that. Sprinkle with oregano and garlic powder. Then sprinkle on mozzarella cheese. Bake at 400 degrees for 8 to 10 minutes. It's really delicious.
Cold Veggie Pizza! It's so good and way easy.





Get a refrigerated pizza crust, or make your own if you want. Bake it according to the directions.





Spread on cream cheese. The kind in the tub is better than the kind that comes in sticks; it's easier to spread. The flavored kinds are great.





Top that with fresh, sliced veggies of your choice. I usually do mushrooms, onions, green peppers, red peppers, yellow peppers, and cucumber slices. So good! But any kind of veggies work just fine. Keep it cold and slice it up like pizza!
my healthy go-to snacks are:


-carrots %26amp; hummus


-sliced apple + peanut butter (if you get plain unsalted peanut butter, add some honey in it..it makes it just a bit sweeter)


-edamame (heat them up + sprinkle some salt)
May sound boring, but it is very good and has a lot of decent stuff: candy corn and salted peanuts...half of each, maybe a bit more candy corn. It is a very good snack!!!
Believe it or not, I really like whole grain toast with butter and honey. Crunchy heaven if you ask me. (and if you throw a scoop of chocolate ice cream on top, well....)
