Here are some of my faves (other than cereal and milk)
1. cook onion and bell pepper together in a little bit of olive oil, once softened add eggs and scramble and stir to combine. Serve with either whole grain toast or bagel. Add a little bit of cheese if you wish
2. Whole grain waffles (2) toasted smear w/ 1 tbs of peanut butter and add either sliced apple or banana. Top with a little cinnamon
3. Really any oatmeal is good for you but you can make it better by adding dried fruits or nuts.
4. whole grain toast topped with banana sllices, drizzle of honey and sprinkle of cinnamon. *this one is really good
5. cheese toast using whole grain bread and cream of wheat or grits if you are from the south
Have you considered making a Breakfast Bread. Slice toast and butter.
Fruit-Nut Breakfast Bread
It's easy! Just roll dried fruit into refrigerated bread dough.
1can (11 oz) Pillsbury庐 refrigerated crusty French loaf
1cup dried apricots, chopped
1/2cup chopped dates
1/2cup slivered almonds
1/2cup powdered sugar
1to 2 teaspoons milk
Heat oven to 350掳F. Spray cookie sheet with cooking spray. Carefully unroll dough onto cookie sheet. Sprinkle apricots, dates and almonds evenly over dough. Starting with long side, roll up; seal edges. Fold ends under; seal. Bake 26 to 30 minutes or until deep golden brown. Immediately remove loaf from cookie sheet; place on serving plate or cutting board. Cool 10 minutes. Meanwhile, in small bowl, stir powdered sugar and enough milk until smooth and thin enough to drizzle. Drizzle icing over slightly cooled loaf. To serve, cut diagonally into slices with serrated knife.
If you don't have fruits listed add ones you like or a packet or two of trail mix.
Ingredients
1 egg
3/4 cup milk
2 tablespoons margarine, melted
1 cup flour
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
===Directions===
1Beat egg until fluffy.
2Add milk and melted margarine.
3Add dry ingredients and mix well.
4Heat a heavy griddle or fry pan which is greased with a little butter on a paper towel.
5The pan is hot enough when a drop of water breaks into several smaller balls which 'dance' around the pan.
6Pour a small amount of batter (approx 1/4 cup) into pan and tip to spread out or spread with spoon.
7When bubbles appear on surface and begin to break, turn over and cook the other side.
