Ingredients
2 eggs
2/3 cup white sugar or Splenda (low -cal)
2 very ripe bananas, mashed
录 cup applesauce
1/3 cup nonfat milk
1 Tbsp vegetable oil
戮Tbsp vanilla extract
1戮 cups all-purpose flour
2 tsp baking powder
陆 tsp baking soda
陆 tsp salt
1/3 cup chopped walnuts
Preheat oven to 325 degrees F (165 degrees C). Spray a full size bread pan with non-stick cooking spray, and lightly dust with flour.
In a large bowl, beat eggs and sugar in a large bowl until light and fluffy, about 5 minutes.
Beat in bananas, applesauce, milk, oil and vanilla.
In a separate bowl, sift together flour, baking powder, baking soda and salt.
Stir flour mixture into banana mixture, mixing just until blended. Fold in walnuts.
Pour batter into prepared pan do not fill more than 1/2 full - if you are using smaller pans, be sure not to fill them more than 1/2 full or they will overflow while baking.
Bake in preheated pan until golden and a toothpick inserted into center of the loaf comes out clean, about 1 hour.

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 8 inch round pans. In a small bowl, whisk together flour, soda and salt; set aside.
In a large bowl, cream butter, white sugar and brown sugar until light and fluffy. Beat in eggs, one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chopped walnuts. Pour batter into the prepared pans.

banana bread is great. but u could try mashed ripe bananas + mix tt in instant vanila pudding mix..yums..
or u could try asian banana fritters :
1) grab a bag of premix shrimp/banana batter mix. instructions on plastic baggie, store bought any oriental markets. deep fry.
2) make ur own : mix flour, cornstarch, eggs, baking powder,
salt, cold water, toasted sesames, dip in cut up bananas,
%26amp; deep fry them.

Low-Fat Banana Bread
Low-Fat Recipe!
1/2 cup sugar
1/4 cup unsweetened applesauce
1/2 cup egg substitute (equals 2 eggs if you prefer)
1/4 cup skim milk
1 cup mashed banana (very ripe)
3/4 cup flour
3/4 cup whole wheat flour
1/2 cup oat bran
2 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. nutmeg
1/4 tsp. baking soda
This bread cooks more uniformly in an 8x8 pan due to the healthy ingredients.
Preheat oven to 350 degrees. Spray pan with non-stick cooking spray. In a large bowl, combine sugar, applesauce, egg substitute, milk, and banana. In a separate bowl, mix remaining ingredients. Add dry ingredients to the banana mixture. Stir until flour is moistened. Pour into pan and bake for 50-55 minutes or until a toothpick inserted comes out clean. A delicious low fat recipe!
Preparation Time: Serves: 8
I like to remove the peels of over-ripe bananas, slice them, and freeze them. Whenever I want a smoothie, I add them in. The over-ripe bananas give the smoothie a sweeter taste than the just ripened ones.
