I don't care what you suggest but I'm tired of eating cereal.Healthy breakfast recipes?

Zesty Cheddar-Asparagus Quiche





Make it on the weekend and serve it up for guests -- or save it for a quick breakfast during the week.


Cooking Time: 45 minutes


Number of Servings: 6


Preparation Time: 25 minutes





You Will Need


1 tablespoon plain dry breadcrumbs


8 ounces small all-purpose potatoes, peeled and very thinly sliced


2 teaspoons olive oil


1 pound asparagus, trimmed


1/2 teaspoon salt, divided


3/4 cup shredded reduced-fat sharp cheddar cheese


3 scallions, sliced


1 can (12 ounces) evaporated fat-free milk


2 large eggs


2 large egg whites


2 teaspoons butter, melted


1 teaspoon dry mustard


1/4 teaspoon freshly ground pepper





What to Do


1. Heat oven to 400掳F. Coat a 9-inch pie plate with vegetable cooking spray and sprinkle with breadcrumbs. Beginning in center, arrange potato slices in slightly overlapping circles up to rim. Lightly brush with olive oil and press down gently. Bake 10 minutes.





2. Set 8 to 12 asparagus spears aside. Cut remaining spears into 1-inch pieces.





3. Sprinkle crust with 1/4 teaspoon salt and 1/4 cup cheddar. Cover with asparagus pieces, then sprinkle with scallions and another 1/4 cup cheese. Arrange whole asparagus spears on top.





4. Beat evaporated milk, eggs, egg whites, butter, mustard, pepper, and remaining 1/4 teaspoon salt in a medium bowl. Pour into pie plate and sprinkle with remaining cheddar. Bake until a knife inserted in center comes out clean, about 35 minutes.





5. Divide into 6 slices. One serving equals 1 slice.

You Will Need


1/2 cup self-rising flour


1/2 tablespoon sugar


1/4 teaspoon baking soda


3/4 cup buttermilk


1 tablespoon vegetable oil


1 large egg


1/2 teaspoon vanilla extract





What to Do


1. Whisk flour, sugar, and baking soda together in a medium bowl. Make a well in center. Whisk buttermilk, oil, egg, and vanilla together in another bowl until blended. Pour into well and whisk just until moistened. Let stand 5 minutes.





2. Meanwhile, coat a large nonstick skillet with vegetable cooking spray and place over medium heat until hot but not smoking.





3. For each pancake, pour 1 tablespoon batter into skillet. Cook until bubbles appear all over cakes and begin to burst, about 3 minutes. Turn and cook until undersides are golden, about 1 to 2 minutes more.





Makes: 16 pancakes

You Will Need


1 large egg


1/2 teaspoon vanilla extract


1/4 teaspoon cinnamon


1 packet artificial sweetener


1 tablespoon skim milk


1 slice bread





What to Do


1. Place all ingredients except bread in a blender; blend until combined.





2. Pour egg mixture into a shallow bowl. Place bread in egg mixture and soak, turning once.





3. Coat a nonstick skillet with vegetable cooking spray and heat over medium heat. Place bread in skillet and pour any remaining egg mixture over bread. Cook until browned on bottom; then turn over to brown other side.





Per serving: Calories 160, fat 6 g, saturated fat 2 g, cholesterol 215 mg, sodium 200 mg, carbohydrates 14 g, fiber 0 g, protein 9 g.

You Will Need


3/4 cup orange juice


1/2 cup sliced banana


2 teaspoons packed brown sugar


1/8 teaspoon almond extract


2 ice cubes


Fresh mint sprig, for garnish





What to Do


1. Combine orange juice, banana, brown sugar, and almond extract in a blender.





2. Add ice cubes and blend until thick and smooth. Pour into a serving glass and garnish with a mint sprig, if desired.

Blueberry Almond Vanilla Cereal


Ingredients:





1 cup higher-fiber cold cereal (like bite-size shredded wheat or low-fat granola)


1/2 cup vanilla soymilk (like Silk brand)


1/4 cup fresh or frozen blueberries


1 tablespoon toasted almonds (sliced, slivered or chopped)


Preparation:





Add the cold cereal to a bowl. Pour in vanilla soymilk.


Sprinkle blueberries and almonds over the top. Enjoy!

Ham %26amp; Egg Casserole


Ingredients:





Canola cooking spray


A 9-inch whole-wheat pie shell, thawed (like Wholly Wholesome brand from Whole Foods with 0 trans fat)


6 ounces Canadian-style bacon, cut into 1/2-inch by 1-inch strips


1 medium sweet onion, halved and thinly sliced


2 large eggs


1/2 cup egg substitute


1/2 cup fat-free half-and-half or whole or low-fat milk


1/8 teaspoon salt


1/8 teaspoon fresh ground pepper


1 cup grated Gruyere cheese, packed (4 ounces)


Preparation:





Preheat oven to 400 degrees. Gently lift thawed pie crust out of the foil plate it comes in and place in an 8 x 8-inch square baking dish. With your fingers, stretch and press the crust to fit nicely in the square baking dish and up the side about 1 inch. Prick bottom of dough with fork several times.


Heat a large nonstick skillet over medium-high heat. Coat with canola cooking spray and add Canadian bacon and onions. Cook, stirring occasionally, until both start to brown (about 5 minutes). Let the mixture cool about 5 minutes, then spread into the pie crust.


In mixing bowl, whisk eggs, egg substitute, fat-free half-and-half or milk, and salt and pepper until smooth. Pour egg mixture into pie shell with ham and onions. Sprinkle Gruyere over the top and bake until top is golden brown (about 40 minutes). Serve warmHealthy breakfast recipes?
