Whats a tasty (yet healthy) recipe for brussel sprouts? (vegetarian here)?

Simple recipe would be nice. I usually just have it plain and its bleh. I dont want to dip in butter/marg like my mum suggests.Whats a tasty (yet healthy) recipe for brussel sprouts? (vegetarian here)?
This isn't a recipe, really, just a method. It's what I do all the time.





Just slice your sprouts in half, from pole to pole (top to bottom), and peel off any wilted outer leaves. If the sprouts are tiny, you don't have to cut them at all. Toss them in olive oil, and add some sliced garlic, salt and pepper. Put them on a baking sheet, and bake them in a really hot oven (400-425 degrees) for about 20 minutes. Use a pair of tongs to turn them over about halfway through the cooking time. You'll know they're done when they've got some dark ';char'; marks on them.Whats a tasty (yet healthy) recipe for brussel sprouts? (vegetarian here)?
You didn't say which kind of vegetarian you are but my favorite way to eat brussel sprouts DOES require butter.





Steam the sprouts and then make an ';au gratin'; of 1/4 stick butter and 1 cup freshly ground bread crumbs toasting the crumbs in the butter in a skillet on the stove top.





When the crumbs are nice and brown, sprinkle them generously on your sprouts. You may need to double this if you are making for more than one person.





And I also like Brussel sprouts viniagrette which is just brussel sprouts marinated in your favorite recipe for vinegar dressing.
Brussel Sprouts with Seeds and Coconut


Serves 4 as a side dish


Vegetarian, vegan if you use oil instead of butter, and gluten-free








3 c. brussel sprouts, trimmed and sliced thin


2 T. ghee or 1 T. butter and 1 T. oil


2 T. urad dal (optional)


1 T. black mustard seeds


2 t. black caraway seeds (regular caraway is ok in a pinch)


2 t. cumin seeds


1/2 c. shredded unsweetened coconut, toasted to light brown (I'm sure fresh would be even better)





2 t. kosher salt


2 t. jaggery or brown sugar


2 t. garam masala


fresh lime or lemon juice (to taste)


Microwave or steam the brussel sprouts for 4 minutes so they are nearly tender.


In a large skillet over high heat, melt the ghee or butter and oil


If you have ural dal (a type of Indian split pea) available, fry it until it starts to turn reddish brown (a couple minutes). This adds an additional crunchy element.


Add the mustard, caraway, and cumin seeds and fry until the mustard seeds pop for a few seconds


Add the brussel sprouts and stir-fry until cooked through (2 minutes)


Add the remaining ingredients, toss, and check seasoning

Ingredients


Serves 4 as a side dish





Up to 30 Brussel sprouts


1 tablespoon olive oil


1 tablespoon Balsamic vinegar


Handful of toasted pine nuts or pumpkin seeds








Method


If the sprouts are still on their stem, gently snap them off.








Wash the sprouts and remove any yellowing leaves.








If you think there might be bugs in your sprouts, soak them in warm, salted water for 10 minutes. This brings the bugs out... Rinse well.








Cut the sprouts into 3 or 4 slices, depending on the size.








Mix the olive oil and balsamic vinegar in a bowl.








Add the sprouts and stir well until they are all coated with the dressing.








Toast the pine nuts or pumpkin seeds under a grill for about 3 minutes, until lightly toasted. Keep an eye on them so they don't burn!








Serve the sprouts sprinkled with the pine nuts / pumpkin seeds.

I really like Brussels sprouts, too. The below link will give you a number of healthful ways to prepare them!
roast them with onions, peppers, courgettes, beansporuts etc...


and then serve them over rice :)
i just put them in microwave for 3 to 5 minutes and put some seasonig on and some lemon and pepper and u r good to go
Steam them and put a bit of olive oil and herbs of your liking..
There is nothing nice to do with brussel sprouts!!x
