Can you give me HEALTHY dinner recipes?

Tortellini Tomato Spinach Soup


30 min | 10 min prep |





SERVES 4 -6





Ingredients


1 tablespoon olive oil


1/2 cup minced onion (about 1/2 small onion)


1 garlic clove, minced


4-6 cups chicken broth or vegetable broth


1 (14 ounce) can whole tomatoes, coarsely chopped


1 (9 ounce) package fresh tortellini or dried tortellini


kosher salt


cracked black pepper


10 ounces fresh spinach or frozen spinach, defrosted and chopped


1/4 cup freshly grated parmesan cheese (optional)





Directions


1In a soup pot, heat olive oil over medium high heat.


2Saute the onion and garlic, stirring often until onions are translucent, about 5 to 7 minutes.


3Add broth and tomatoes, turn heat up to high, and bring to a boil.


4Add the tortellini and cook according to package instructions.


5When tortellini is almost done, add spinach and taste, adjusting seasonings with salt and pepper.


6Serve immediately.


7Garnish each serving with a sprinkling of Parmesan

Black Bean and Tortilla Bake

SERVES 6





Ingredients


1 garlic clove, minced


1/2 cup chopped onion


1 cup chopped tomato


1/2 cup chopped green onion


1/2 teaspoon chili powder


2 teaspoons cumin powder


1 (8 ounce) can tomato sauce


1 (16 ounce) can black beans, rinsed and drained


1 tablespoon chopped cilantro


salt and pepper


12 soft corn tortillas


8 ounces low-fat cheddar cheese, shredded, reserve 2 tablespoons (I used fat free)








Directions


1Preheat oven to 350* F.


2Spray a large skillet with cooking spray.


3Add garlic, onions, tomato, green onion, cumin, and chili powder.


4Cook on medium heat until onion is tender.


5Add tomato sauce and cook 5 minutes more.


6Stir in beans, cilantro, salt and pepper.


7Spray a 9 inch square baking dish with cooking spray.


8Layer 4 tortillas, 1/3 cheese, and 1/3 of the bean mixture; repeat 2 more times.


9Top with reserved 2 tablespoons of cheese.


10Bake 20 minutes, covered, then 10 minutes uncovered or until bubbly.

Mexican-Style Pasta With Chicken and Peppers

SERVES 6





Ingredients


4 cups low sodium chicken broth


1 minced garlic clove


1 teaspoon cumin


1/2 teaspoon chili powder


4 plum tomatoes, well drained or 6 whole canned tomatoes, well drained


3 scallions


1 large green bell pepper


3/4 lb vermicelli or other thin pasta


1/2 lb boneless skinless chicken breast


1 tablespoon vegetable oil


1 (4 ounce) can chopped mild green chilies, drained


1/4 teaspoon salt (omit if using regular chicken broth)


1/4 cup fresh cilantro stem (optional)





Directions


1In a medium saucepan, bring the chicken broth, garlic, cumin and chili powder to a boil over medium-high heat.


2Meanwhile, coarsely chop the tomatoes, scallions and bell pepper. Break the vermicelli into 2-inch pieces.


3Add the chicken to the boiling broth, reduce the heat to medium-low, cover and simmer until the chicken is cooked through, about 10 minutes. Remove the chicken and set it aside to cool slightly.


4In a large nonstick skillet, warm the oil over medium-high heat until hot but not smoking. Add the vermicelli and cook, stirring, until the vermicelli is lightly browned, about 2 minutes.


5Add the broth mixture, tomatoes, scallions, bell pepper, green chilies and salt, and bring to a boil over medium-high heat. Reduce the heat to low, cover and simmer, stirring occasionally, until the pasta is cooked, about 7 minutes.


6Meanwhile, shred the chicken. Mince the cilantro (if using).


7Stir the shredded chicken and cilantro into the pasta mixture and serve hot.

veggie crepes





1/3 cup reduced-fat sour cream


1/2 cup chopped fresh chives, divided, plus more for garnish


3 tablespoons low-fat milk


2 teaspoons lemon juice


3/4 teaspoon salt, divided


1 tablespoon extra-virgin olive oil


2 cups chopped zucchini


1 1/4 cups chopped green beans


1 cup fresh corn kernels (from 1 large ear; see Tip)


1 cup part-skim ricotta cheese


1/2 cup shredded Monterey Jack cheese


1/4 teaspoon freshly ground pepper


4 9-inch “ready-to-use” crêpes (see Tip)





1. Stir sour cream, 1/4 cup chives, milk, lemon juice and 1/4 teaspoon salt in a small bowl until combined. Set aside.


2. Heat oil in a large nonstick skillet over medium-high heat. Add zucchini, green beans and corn and cook, stirring, until beginning to brown, 6 to 8 minutes. Reduce heat to low; stir in ricotta, Monterey Jack, the remaining 1/4 cup chives, the remaining 1/2 teaspoon salt and pepper. Cook, stirring gently, until the cheese is melted, 1 to 2 minutes. Remove from the heat.


3. To roll crêpes, place one on a piece of parchment or wax paper (or leave it on the piece of plastic separating the crêpes in the package). Spoon one-fourth of the vegetable-cheese mixture (about 3/4 cup) down the center of the crêpe. Use the paper (or plastic) to help you gently roll the crêpe around the filling. Place the crêpe seam-side down on a dinner plate. Repeat with the remaining crêpes and filling. Serve each crêpe topped with 2 tablespoons of the reserved sauce and more chives, if desired.
