Do you have a recipe for healthy MUFFINS containing fruit and nuts?

I am in Australia our flours are either Plain,


or Self-Raising. I have noticed American recipes contain


All Purpose flour I don't know what that means.Do you have a recipe for healthy MUFFINS containing fruit and nuts?
Maple Banana Muffins with Cinnamon Crumble - FABULOUS and really easy!





Muffin Ingredients:


2 c all purpose flour


3 tsp baking powder


1 tsp baking soda


1/4 tsp salt


1 c maple syrup


1 c mashed bananas


1/3 c softened butter


1 egg


1 c chopped nuts (whatever is your favorite) I've used macadamias, hazelnuts, walnuts, pecans...anything works.





Topping Ingredients:


2 c Oats (any brand is fine)


1 c brown sugar


1/3 c cinnamon


1 stick melted butter

1. In medium bowl, combine all TOPPING ingredients and mix well. Set aside.





2. Combine flour, baking soda, baking powder, nuts and salt in a large bowl.





3. In a small bowl, bananas and add syrup and egg, beat until well mixed.





4. Combine all ingredients in the large bowl and mix well.





5. Fill muffin cups (I use paper muffin cups) with about 4 tablespoons of muffin mix, then cover that layer with about 2 tablespoons of crumble. On top of that, add muffin mixture to about 1/4 from the top of the muffin cup. Top with a little more crumble.





6. Bake @350 degrees for 12-14 minutes then reduce oven temp to 300 degrees and bake for 25-30 minutes more. Muffins are done when a toothpick comes out clean.





These muffins (can also be made as banana bread) are unbelievably yummy and not overly sweet.Do you have a recipe for healthy MUFFINS containing fruit and nuts?
All purpose flour means it doesn't have salt,baking soda or baking powder in it. Its mostly used for making loaf breads. Its the same as self rising except in self rising flour they have already put in the salt and baking powder. My friend use to replace oils and sugar in muffins and anything else sweet she would bake with applesauce. And they were the best muffins I've ever had. And very moist.
Rhubarb/Strawberry/Muffins





3 stalks of rhubarb


2 pounds of strawberries





A large saucepan (see note below)


1 calf's foot (about 1 to 1 1/2 pounds)


2 pounds honeycomb tripe


1 large onion


3 cloves garlic, peeled


6 peppercorns


2 teaspoons salt, or to taste


4 quarts of water


A comal or griddle


3 large chiles anchos


A spice grinder


A large chile poblano, peeled or 2 canned, peeled green chiles


The calf's foot


1/2 cup canned hominy (1 pound) drained (see note below)


Salt as necessary


1 scant teaspoon oregano





Have the butcher cut the calf's foot into four pieces.





Cut the tripe into small squares. Put them into the pan with the rest of the ingredients.





Cover with water and bring to a boil. Lower the flame and simmer uncovered for about 2 hours, or until the tripe and foot are just tender but not too soft.





Meanwhile, toast the chilies well. Slit them open and remove the seeds and veins from the chile poblano, cut it into strips, and add to the meat while it is cooking.





Remove the pieces of calf's foot from the pen, and when they are cool enough to handle, strip off the fleshy parts. Chop them roughly and return them to the pan.





Add hominy and continue cooking the menudo slowly, still uncovered, for another 2 hours.





Add rhubarb, strawberries and salt as necessary. Sprinkle with oregano and serve.





This amount is sufficient for 7 or 8 people. It should be served in large, deep bowls with hot tortillas and small dishes of chopped chile serranos, finely chopped onion and wedges of lime for each person to help himself, along with Salsa de Tomate Verde Cruda to be eaten with tortillas.
SUGARLESS FRUIT - NUT MUFFINS





1 c. chopped dates


1/2 c. chopped raisins


1 c. chopped prunes





Bring above to boil with 1 cup water. Cook until soft. Stir in:





1/2 c. butter


1/4 tsp. salt





Let cool, then add:





2 beaten eggs


1 tsp. vanilla


1 c. flour


1 tsp. baking powder


1 c. nuts





Put in muffin tins. Bake at 350 degrees for 15 minutes. If desired, bake in 11x7-inch pan about 30 minutes. Will make 32 muffins.


Diabetic exchanges: 1 small muffin equals 1/2 fruit, 1 fat, 1/2 starch. 94 calories 52 mg. sodium, 14 mg. cholesterol, 12 gm. carbohydrates, 2 gm protein, 4 gm fat.
