When using fresh basil you need to remember that you would use double of triple the amount over dried. Other then that, use it as you would use dried basil. How do I incorporate fresh basil on my dish? Does anyone has any good, quick and healthy recipe...Thanks?
Depends upon the dish. But you can always sprinkle it on otp of a pasta dish, or most any other dish, really.

Lay a bunch of leaves on top of each other, and roll into a ';cigar.'; Then slice the cigar into tiny little slices. This is called a chiffonade. Fluff up the slices/strings of basil and add to your dish, a salad, dressing, marinade, whatever.

You can also make fresh pesto w/ it. Fresh pesto is great on a sandwich, tossed w/ hot pasta, or used to season roast chicken. And it can be frozen if you smooth it flat and top it w/ a bit of oil so it doesnt' turn dark.

BASIL PESTO

2 cups loosely packed basil leaves, washed and dried thoroughly

2 Tbsp. toasted pine nuts

2 Tbsp. freshly grated Parmesan

1/4 tsp minced garlic

1/2 tsp kosher salt

1/4 cup plus 1 Tbsp. extra-virgin olive oil

Freshly ground black pepper

In a food processor, combine the basil, pine nuts, Parmesan, garlic, and salt and puree. While the motor is running, drizzle in the oil until incorporated. Season with pepper to taste. Use immediately or store in the refrigerator with a piece of plastic wrap placed right on the surface of the pesto to prevent discoloration, for up to 3 days, or freeze for up to 1 month. How do I incorporate fresh basil on my dish?
