What is a good healthy recipe?

I need a healthy recipe for my cooking class. It has to be low in something that is not healthy (carbs, fats, sodium, etc) and high in something that is healthy (vitamin C, iron, protein, etc).

Fake French Toast


2 eggs


1 TBS water


1 pkt Splenda


dash of cinnimon





Beat the eggs (by hand is fine) in a small bowl. Add the rest and beat some more. Spray a small fry pan with your favorite spray. Heat on medium high until a drop of water would sizzle. Pour eggs into pan and cover. Cook until set. (Covering the pan makes this light and fluffy.)





Serve immediately with a little no sugar syrup ... on phase 2 this would be great with fruit.What is a good healthy recipe?
Your teacher is an idiot!! however go to http://www.recipezaar.com and find almost anything your little heart desires and make it. Leave out the salt when using all other natural foods and it will be very low sodium and high in most other nutrients.
thats easy! just search weight watchers recipes.....you'll find something delicious! like pizza potatoe skins =p
