These are my favourite healthy fruity muffins ! I have one with a glass of milk and a banana every morning :) There quite filling aswell .





Ingredients





160 g (1 cup) chopped mixed dried fruits





225 g (11/2 cups) whole meal self-raising flour





1 teaspoon baking powder





150 g (1 cup) unprocessed oat bran





60 g (1/3 cup) soft brown sugar





290 ml (10 fl oz) skim milk





1 egg





1 tablespoon oil

Method:





Preheat the oven to 180掳C (350掳F/ Gas 4). Grease twelve 125 ml (1/2 cup) muffin holes. Soak the dried fruit in a bowl with 3 tablespoons boiling water for 5 minutes.





Sift the flour and baking powder into a large bowl. returning the husks to the bowl. Stir in the oat bran and sugar and make a well in the centre.





Combine the milk. egg and oil in a jug. Add the soaked fruit and milk mixture all at once to the dry ingredients. Fold in gently using a metal spoon. until just combined.





Divide evenly among the muffin holes. Bake for 20 minutes, or until golden and a skewer inserted into the centre comes out clean. Cool for a few minutes in the tin, then turn out onto a wire rack.Does anyone have any great, healthy fruit muffin recipes?

THE BEST! MUFFIM!!!!





8 oz MILK


1/3 cup sugar


1 egg


1/3 cup, oil or butter


2 cups corn flakes,or raisin brand


mix well, leave por 5 min to be soft


1/4 PRESERVE


ADD, 1 1/2 CUP SELF RAISING FLOUR, MIX .


PRESERVE ON TOP.


BAKE AT 400*f , ABOUT 18/ 20 MINUTES , MUFFIN CASES. (12 ) Report Abuse

Healthy and muffins is an oxymoron. There is no such animal. Most muffins have too much oil in the recipe to be healthy. They taste good, though. Report Abuse

This is from our family recipe book : Easy Blueberry Muffin (high in antioxidants) : 1 c. Fresh Blueberries, 2 c. plus 2 Tbl. All - purpose Flour, divided, 1/4 c. sugar, 1 Tbl. plus 1 tsp. Baking Powder, 1/2 tsp. Salt, 1 Egg, 2 Tbl. Veg. Oil, 1 c. milk (or 2% milk). DIRECTIONS : Pre-heat oven to 400*f. Dredge blueberries in 2 Tbl. flour, set aside. Combine remaining flour, sugar, baking powder and salt. Beat together milk, egg and oil; add to dry ingredients, and stir just until moistened. Fold in blueberries. Using healthy butter substitute (recipe calls for unsalted butter), grease muffin pans and fill 2/3 full. Bake for 20 - 25 minutes. Remove from pan immediately and cool on wire rack. Yields 1 dozen.
6 oz self raising flour


3 oz butter


3oz sugar


3 eggs


I teaspoon vanilla extract


2 oz blueberries


Put all the ingredients EXCEPT the blueberries in mixer or hand whisk .When blended, add a little milk to make the mix soft.Stir in blueberries.Sprinkle some sugar on top of each one


Cook in muffin cases ( makes 9) for 20 mins or until middle is bouncy to the touch.Cool on wire rack.Delicious warm with creme fraiche
