my favourite one is-boil half a pan of water, add 2 vegetable stock cubes, some salt and pepper, a cup of rice, a cup of lentils, chop up a leek, half an onion, 3 potatoes,a celery stick, 5 carrots, a parsnip, and a cup of peas.
It may sound a bit strange but its so good for you because of all the vegetables and tastes great!
And that's it!Just leave it to simmer for about an hour and there you go!
You can change the veg around, I always put in veg i wouldn't usually eat as when they are in soup you cant tell!
Another one is to again boil half a pan of water, add 2 ham stock cubes, 2 cups of rice, salt and pepper, a cup of lentils, shred or cut around 3 chicken breasts into cubes, cut up a leek, half an onion and again simmer for an hour!
That one tastes great and for a change, instead add a few spring onions and add only 1 cup of rice, add noodles instead of noodles.

Good on you for being conscious about your diet... here is a great soup that I have for lunch most days...
6 medium Carrots
1 beetroot washed well
8 large. tomatoes
1 bunch spinach (or 1 bag baby spinach)
1/4 head cabbage
1 red bell pepper
1 green bell pepper
3 stalks celery
1 onion
1/2 clove garlic, or to taste
1 - 3 Kale leaves (a little goes a long way)
Chili pepper to taste
1 tbs. Worcestershire sauce
pinch ground black pepper
3 drops Tabasco (optional)
3 hot pints of Water, with 4 Veg Stock Cubes dissolved
Put all ingredients in a pan and bring to boil for 20 mins.
When Cooled, Put 3/4 of Soup through a blender, (I leave a 3rd to add some crunch)
Freeze as much as you like, or heat till piping hot, and ENJOY !
