This is my favorite Chicken Pasta Salad


Its is very nutritious and filling





1 box whole wheat rotini pasta (cooked, drained and cooled)


2 chicken breast slightly seasoned with red pepper (cooked, cut into small pieces and cooled)


1-2 cucumber (depending on size) cut into chunks


1-2 tomatoes (depending on size) cut into chunks


1 bottle of french or catalina dressing (low fat or fat free)


pinch of salt





combine all ingredients. Pour the dressing over salad (amount depending on your taste) and stir. Cool and serve!


I love this recipe and make it all year long!!!! YUMMY!!
I take a whole chicken and pouch it in salted water until its cooked through. Let it cool, then shred the chicken and mix with bbq sauce.





Quarter red potatoes and season with dried thyme, salt and pepper and cook in 350 degree oven until tender. (about 40 minutes)





Trim the end of fresh green beans and cook with olive oil, white wine, salt and pepper in a saute pan until they are a little tender but still crisp





This meal is so nutritious and had virtually no fat. The fat in the olive oil is really good for you.

Our Family's Favorite Avocado Recipe


1 ripe avocado, mashed


3 tbsp. salsa


1/2 tbsp. honey


1 tbsp. Spanish onion, finely chopped


1 tbsp. lemon juice


1/4 tsp. garlic powder


1/4 tsp. onion powder


1/2 tsp. low-salt chicken base powder


Braggs Seasoning or sea salt to taste


1/2 tsp. Vegit seasoning (optional)





Blend all the ingredients in a bowl and serve with cut up raw vegetables.
