Please help me--I hate healthy foods, but need them. Good recipes?

Hi-- I love to cook and enjoy food.


But, I like the bad stuff. I'm at a good weight, but just had a blood panel that showed high cholesterol, lipids, and fatty liver. Ick!


I know there are tons of websites for healthy eating, and know about healthy cooking methods, but just love tasty food. I would appreciate people sharing their own favorite good, healthy recipes.

Lemon Spaghetti





2/3 cup olive oil (this oil is heart healthy)


2/3 cup freshly grated parmesan cheese


1/2 cup fresh lemon juice (from about 2 lemons)


1 teaspoon salt


1/2 teaspoon pepper


1 pound whole wheat spaghetti


1/3 cup chopped fresh basil


1 tablespoon grated lemon zest (from the two lemons)





In large bowl, whisk the oil, cheese, lemon juice, salt and pepper to blend. Set the sauce aside. Meanwhile, cook pasta according to package directions. Drain, reserving one cup of the cooking liquid. Add the spaghetti to the lemon sauce, and toss with basil and lemon zest. Moisten with reserved pasta water until desired consistancy is reached. Use more salt and pepper to taste. Can be used as a light meal or a side dish to boneless skinless grilled chicken. It is light and delish!Please help me--I hate healthy foods, but need them. there is a healthy and quick recipe for being on the go





take leftover rice and mix it with your favorite veggies (carrots, peppers, broccoli, etc.)


add 1/2 teaspoon of healthy ranch dressing and toss to coat completely


serve with bottled water enjoy :)
Chicken Drums:- Herbed


8 Drumsticks.


3-4 Cloves of Garlic. (crushed)


2T Oregano, Rosemary, Thyme or Parsley. (fresh, chopped)


Zest of 2 Lemons.


2t Salt.


Ground Black Pepper.


Oil.


4 Carrots. (peeled)


4 Parsnips. (peeled)


Pre heat oven to 180C (350F)


a) Mix together garlic, herbs, lemon zest, 1t salt, 1T of oil.


b) Remove skin and knuckle from drumsticks (optional) and toss in the mixture to coat evenly. Place on oven tray lined with baking paper.


c) Cut carrots and parsnips into 录鈥檚 lengthways and toss in the remaining salt oil and herb mixture. Scatter around drumsticks.


d) Bake drumsticks, carrots and parsnips for 30 minutes.

Tomato and Basil Pasta Recipe





For two people, you will need:





2 cups of pasta shells


1 400g tin of chopped tomatoes in tomato juice


2 cloves of garlic (finely chopped)


1 medium sized courgette/zuccini (sliced and chopped in to 1cm cubes)


1 tbsp roughly torn fresh basil leaves


Olive oil


Salt and freshly ground black pepper





In a large pot (which will ultimately minimise any splashes on your hob!) sweat the garlic gently for a few minutes in a little olive oil. Add your tinned tomatoes and your courgette/zuccini and bring up to a gentle simmer, covering the pan and stirring occasionally. Your sauce is going to take approximately twenty minutes, so following the instructions on the packet, cook your pasta in a separate pot, with a view to it being ready at the same time as your sauce. Drain your pasta well, then very importantly, add it to the pan with your sauce for a minute, along with the chopped basil, stirring gently. This allows the sauce to fully coat your pasta and ensures the flavour is spread throughout the dish. Season as required and serve.
