What is your favorite healthy dinner & recipe?

I am starting to get bored with dinner prep. so I am looking for some new and interesting dinner ideas. We are a family of four I have two kids 3 and 1 1/2 and we need to add some new meals to our menu. So I am looking for your favorite healthy recipe to share. I will try all the meals that sound yummy and I will reward the best with 10 points. THANKS!What is your favorite healthy dinner %26amp; recipe?
My kids ask for this meal regularly.


Sheppards pie.


1 1/2 pounds lean ground beef


1 small onion chopped finely


salt and peper to taste


1/8 teaspoon of garlic powder


1 can cream of mushroom reduced sodium





6 -8 medium potatoes cubed


salted water


2 T butter


Milk





Cheese, american or shredded taco cheese or whatever cheese you have at home





1 can corn drained


1 can green peas drained





brown beef with onions, season to taste with salt and pepper and garlic powder. drain well


boil the potatoes in salted water until soft, drain well add butter and milk, mash with electric mixer or potatoe masher.





put meat mix into bottom of a 13X9 baking dish next add corn and peas, then cover with mashed potatoes, finish with cheese. bake for about 15 - 20 minutes in a 350 degree oven.


The kids love it and you will too!





another real easy one,


spaghetti bake.





1 box vermicelli


a little butter


prago or my favorite is Emerils gahhhhlic sauce


left over chicken or pork chops


mozzarella


parmeasan cheese





boil spaghetti- rinse and drain


put into the bottom of a 13 x 9 pan add a little butter


put left over meat on top of spaghetti


add sauce


bake for about 15 mins


add mozarella and parmasean


bake for about 15 mins more


use frozen garlic bread


make a salad


and ';bamm'; a good easy meal!

Get some catfish fillets, cover a baking sheet with foil and spray LIGHTLY with pam or something like it. Dust the fish with the following spices: lemon pepper, and Emeril's seasoning (in the spice isle) then squirt some fresh lemon juice on each. Put the fish in the oven under the broiler for several minutes until fish will flake with the touch of a fork in the middle. As sides, I enjoy having a salad made of baby spinach leaves with turkey bacon, boiled egg, and poppyseed dressing. To round it out, have a starch such as cheesy rice, shells and cheese, or Sister Shubert Rolls. This is very easy to make with excellent table presence, and it covers all of the food groups. Enjoy!

Turkey Chili


Very very very good. Very healthy and hearty. There is no real recipe as long as you get all the ingredients in the pot. I make it by browning WHITE meat turkey first until you see a little pink. In a separate pt add a little virgin olive oil and vegetables. (any kind you like) I usually add mushrooms, fresh garlic, onions, and 2 different kind of peppers. Add in spices, (Cumin, chili powder, garlic powder, onion powder, red pepper flakes and sale/pepper to taste) Just eyeball everything. After about 10 minutes add meat, canned crushed tomatoes, kidney beans and corn. Cook another 15-20 minutes and add tomato paste. This adds flavor, color, and texture. This recipe sounds wierd and the instructons are vague. Try it, and you will be surprised. Its very hard to mess up. By the way, its money.
Get some pork chops. LIghtly brown them. In a casserole dish, ipen up two cans of green bean, dump into the pan (juice and all). Peel some potatoes, cut into bite size pieces, add to green beans If you like onions, you can add onions for extra flavor. Add Worstershire sauce for flavor. Layer the pork chops on top, bake in oven at 350 until potatoes are done. All you have to do is add a salad, and it's done. I also do this recipe with miniature sausage links (polish sausage)
I like to fix Vegetarian Pizza, It is healthy with veggies, and kids usually love it.Only taking about 30 minutes at the most to make.I use a Pizza crust mix to start to make the bottom follow directions on box. Then i mix together 8 oz. softened cream cheese with 8oz. of sour cream. After the crust is cooked and cooled down I spread on the cream cheese mixture. On top I cover with my favorite veggies,etc. broccolli, carrots, olives..Finally I spread shredded cheese on top. Again use your favorite cheese. Cut into squares and serve. The kids can even help if you like like spreading the items over the pizza so you know they have helped too gives some bonding time
Roasted salmon with steamed broccoli and sweet potato oven fries--lay the salmon skin side down in a baking dish atop slices of onion and a sprig or two of rosemary, sprinkle salmon with kosher salt and roast in a 500 degree oven for twenty minutes.
Try the food network. Lots of recipes to choose from. I really like Rachael Ray's 30 minute meals...fast and delicious!
How about a tuna macaroni salad...2 cans of tuna, drained mix with mayo salt and pepper and chopped celery, and about 3/4 lb. of elbow macaroni cooked and drained, mix together...chill or serve immediately....Delicious cold.

Hara Pulao

Ingredients:


Basmati rice 1 cup


Cauliflower (cut into small pieces) 250 grams


Green peas 150 grams


Thinly sliced potatoes 200 grams


Cinnamon 2 sticks


Cloves 4-5


Black pepper 7-8


Bay leaves 2-3


Green cardamom 2


Thinly sliced onions 2


Thinly sliced green chilli 2


Vegetable oil 4 tbsp.


Paste of {green Coriander leaves, green chillies,ginger}


1 bunch (about 100 grams)


4 inch


Salt to taste


Garam masala powder





Method:





1. Heat 1 tbsp. oil in a pan. Fry bay leaves, cloves, cinnamon, black pepper for 1/2 minute on medium heat.


2. Add thinly sliced onions, green chillies and fry till pink. Keep this aside.


3. Take rest of the oil and fry all the vegetables for 4-5 minutes. This adds taste to pulao.


4. Add paste of coriander leaves, green chilli and ginger to it.


5. Add the fried onions, garam masala and salt. Stir and then fry it for 5 minutes.


6. Add washed rice and water (slightly more than 2 cups). Cook on medium heat. Stir rice once while its getting cooked.


Green spicy pulao is ready to serve. Decorate with chopped green coriander leaves.

Beef Broccoli Pie:





Double Pie Crust (Betty Crocker's Recipe)


Steamed Broccoli


Mozzarella Cheese


For the filling:


1 lb Ground Beef


Butter


Garlic


Salt


Pepper


2 tbsp flour


1 cup milk


1 egg


8oz Cream Cheese





Preheat oven to 350F





Steam Broccoli





Place about two tablespoons butter in a deep sided frying pan. Sautee the garlic until just browned. Add the ground beef and brown completely. Drain grease. Add two tablespoons flour and stir. Add milk and cream cheese. stir until completely mixed and the cream cheese is ';melted';. Take a small amount of the sauce in a cup. Add the egg to the cup and mix. Then add the mixture back to the frying pan. The sauce should be a little runny. If not, add a little more milk. Season with Salt and Pepper to taste. Let simmer on low heat. Sauce should thicken slightly.





Prepare Pie Crusts, if you haven't already, and lay one half in pie pan. Prick bottom of the crust with a fork.





Stir broccoli into thickened sauce until well coated.





Spoon Contents of the frying pan into the pie crust. Cover with slices of mozzarella cheese. And top with second part of pie crust. Pinch the edges and prick the top of the pie crust with a fork. Brush with milk and put in the oven for 30min or until crust is golden brown.





Remove from oven. Let cool for ten minutes.





Slice and serve with fruit. It's kind of a meal in itself and everyone loves it. Even people who don't like broccoli. When you get more comfortable with the recipe play with the seasonings and vary the cheeses. Pepperjack is a goog one too.
Water melon and white cheese
Mango and Spinach Salad with Creamy Cashew Dressing





Prep Time: 20 minutes


Cooking Time: None


Makes: 4 servings





For the dressing:





1/2 cup unsalted roasted cashews


Zest of 1 lime (optional)


1/4 cup lime juice


1/3 cup water


2 Tbsp honey


1 tsp Dijon mustard


Salt and pepper to taste





For the salad:


5 oz. pkg. baby spinach


1 small, ripe mango, peeled and sliced





Method





Place all ingredients for the dressing in a food processor and pulse until smooth. Place the spinach in a bowl and toss with the dressing; mound on plates and top with mango slices. Or, divide and mound the spinach, undressed, on plates, decorate with mango slices and dot the top of the salad with the creamy cashew dressing. Sprinkle some extra cashews on top. You can adapt the recipe by using sliced nectarines instead of mango, or skipping the fruit all together.
Try wraps. Wraps are tortillas. Tortillas come in different flavors and there are healthy ones too, like whole wheat and vegetable. My favorite is spinach and sun dried tomato. You can put just about anything on them. I usually use chicken, fat free cheese, fresh baby spinach, mushrooms, avocado and I usually use Ranch Saladin dressing instead of mayo. You can make cold or hot wraps depending on what you're hungry for. Kids love 'em. You just have to experiment with them til you find one to your liking. I even make them for breakfast with egg beaters, cheese, bacon and salsa. Try em' I guarantee you like 'em.
Beef and Potato Casserole


When your family is hankering for meat and potatoes, put together this easy casserole.





1 pound lean ground beef


1 large onion, chopped (1 cup)


1 package (8 ounces) sliced fresh mushrooms


1 teaspoon salt


3/4 cup water


2 tablespoons butter or margarine


1 cup Betty Crocker® Potato Buds® mashed potatoes (dry)


3/4 cup sour cream


2/3 cup Original Bisquick® mix


2 teaspoons chopped fresh chives


1 egg


3 tablespoons Original Bisquick® mix


1 can (18.8 ounces) Progresso® Vegetable Classics creamy mushroom soup


1 bag (1 pound) Green Giant® frozen broccoli cuts, thawed and drained


1/4 cup ketchup








1 . Heat oven to 400ºF. Cook beef, onion, mushrooms and salt in 12-inch skillet over medium heat, stirring occasionally, until beef is brown.


2 . While beef is cooking, heat water and butter to boiling in 2-quart saucepan; remove from heat. Stir in potatoes (dry) and sour cream. Let stand 1 minute, then stir vigorously until smooth. Stir in 2/3 cup Bisquick mix, the chives and egg.


3 . Drain beef mixture. Stir 3 tablespoons Bisquick mix into soup. Stir soup mixture, broccoli and ketchup into beef mixture. Heat to boiling. Boil uncovered 1 minute. Pour into ungreased 3-quart casserole. Scoop potato dumpling mixture around edge of casserole.


4 . Bake uncovered 25 to 30 minutes or until dumplings are light golden
Give you one of my old ones when family got bored like you did.





Mini Home Made Pizzas (you may have to double receipt)





2 cans of pre-made biscuits to bake


1 or 2 cans Contindina Pizza Sauce


1 bag Shredded Monzerella Cheese


1 pkg. Pepperoni


1 can of Mushrooms





As children are small I would suggest you grind or chop pepperoni and mushrooms in a food processor or chop fine.





Pat out or use a rolling pin to flatten biscuits until thin (if you want, use a glass and indent each biscuit for the sauce to prevent it from going over side of biscuit) and place on pizza pans or cookie sheets.





Put pizza sauce on top and top it off with mushrooms, pepperoni and monzerella cheese.


(you can add other items also if you'd like)





Bake in oven at 400 degrees until brown or cheese melts (or check bottom of biscuits)





Let the kids watch you make them (Daddy too) and you'll all have a ball and an enjoyable well balanced meal too.
Have bacon %26amp; scrambled eggs %26amp; gravy %26amp; biscuits %26amp; fried potatoes. Yum!!!!! Absolutely wonderful, then if you're not full throw in a couple of stacks of pancakes, with lots of butter %26amp; real maple syrup.
** No-Boil Macaroni and Cheese **


You can add diced ham to this to make it an entree casserole; serve w/ a veggie or salad.





2 cups uncooked elbow macaroni


1 stick butter or margarine (cut into pieces)


12 ounces yellow cheddar cheese (shredded)


4 ounces mozzarella cheese (shredded)


5 cups milk


1 tsp. salt, or to taste


¼ tsp. black pepper, or to taste





Preheat oven to 350º. Layer raw macaroni, butter, and cheeses in the order given in a 9 x 13” sprayed baking dish. Pour milk over the top layer. Bake for uncovered 45 minutes; cover with foil and bake 15 minutes more.

** Broccoli %26amp; Bow Ties **





Kosher Salt


8 cups broccoli florets (about 4 heads)


½ lb. farfale pasta (bow ties), about 4 cups dry


2 Tbsp. butter


2 Tbsp. EVOO


1 tsp. minced garlic


zest of 1 lemon


1 Tbsp. freshly squeezed lemon juice


¼ cup toasted pine nuts (pignoli)


freshly grated parmesan cheese, optional





Cook broccoli for 3 minutes in large pot of boiling, salted water. Remove broccoli with slotted spoon or sieve; place in large bowl and set aside.





In the same water, cook the bow tie pasta according to package directions, or about 12 minutes. Drain well and add to the broccoli.





Meanwhile in a small saute pan, heat the butter and olive oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Remove from heat, and add 2 tsp. kosher salt, black pepper, and lemon juice, and stir well. Pour over the broccoli and pasta. Toss well, and season to taste. Sprinkle with pine nuts and parmesan cheese, if desired, and serve. Serves 6-8

** Lynn's Broccoli Rice Casserole **


a great dish to use up leftover rice from the night before!





½ cup chopped onion


½ cup chopped celery (*I will often leave out if I have none)


4 T. margarine


2 cups cooked rice


1 (10½ oz) can cream of mushroom soup


2 (10-oz) pkg. frozen chopped broccoli, barely cooked and drained


1 (8 oz) jar Cheese Whiz (*I will often use a chub of Kraft Garlic Cheese or Tostitoes Nacho Cheese, whatever I have around)


1 4-oz) can water chestnuts, diced





Saute’ onions and celery in margarine. Mix all ingredients. Put into a greased 2-qt. baking dish. Bake at 350ºF for 25 minutes or until bubbly. Serves 8. Enjoy!!

** Sweet Pork with Garlic **





4 garlic cloves, minced


1 tablespoon hoisin sauce


1 tablespoon Dijon mustard


1 tablespoon ketchup


2 tablespoons lite soy sauce, divided


6 teaspoons honey, divided


1 (3/4-pound) pork tenderloin


Vegetable cooking spray


2 teaspoons rice vinegar


1 teaspoon sesame oil


1 teaspoon chili garlic sauce


1/2 cup chopped green onions


1/4 cup chopped fresh cilantro


Garnish: fresh cilantro sprigs





Stir together minced garlic, next 3 ingredients, 1 tablespoon soy sauce, and 2 teaspoons honey.


Spoon garlic mixture evenly over pork, rubbing well into pork.


Place pork on a rack coated with cooking spray in an aluminum foil-lined roasting pan.


Bake at 350° for 30 minutes or until a thermometer inserted into thickest portion registers 155°. Remove from oven; cover pork loosely with aluminum foil, and let stand 10 minutes.


Cut pork diagonally into slices. Place slices on a serving platter.


Whisk together vinegar, sesame oil, chili garlic sauce, remaining 1 tablespoon soy sauce, and remaining 4 teaspoons honey. Drizzle evenly over pork. Sprinkle evenly with onions and cilantro. Garnish, if desired.





Yield: Makes 4 servings

** Deep Dish Taco Squares **





2 cups biscuit mix


½ cup cold water


1 pound ground beef


½ green bell pepper -- chopped


2 Tbsp. chopped onion


1 pkg taco seasoning mix


1 (8-oz) can tomato sauce


1( 8-oz )carton sour cream


1 cup shredded sharp Cheddar cheese


1/3 cup mayonnaise or salad dressing


Paprika





Combine biscuit mix and water, stirring with a fork until blended. Press mixture in bottom of a lightly greased 13 x 9 x 2-inch baking dish. Bake at 375ºF for 9 minutes.





Cook ground beef, green bell pepper, and onion in a large skillet until meat is browned, stirring to crumble meat; drain well. Stir in tomato sauce and taco seasoning mix, spoon over crust.





Combine sour cream, cheese, and mayonnaise in a medium bowl; spoon over meat mixture. Sprinkle top evenly with paprika.





Bake at 375ºF, uncovered, for 25 minutes or until casserole is lightly browned. Cut into squares to serve.

** Texas Oven-Roasted Beef Brisket **

2 Tbsp chili powder


2 Tbsp salt


1 Tbsp garlic powder


1 Tbsp onion powder


1 Tbsp ground black pepper


1 Tbsp sugar


2 tsp. dry mustard


1 bay leaf, crushed


4 pounds beef brisket, trimmed


1½ cups beef stock





Preheat the oven to 350ºF. Trim brisket of majority of excess fat. Do not remove all fat (yet).


Make a dry rub by combining first 8 ingredients. Season the raw brisket on both sides with the rub. Place in a roasting pan and roast, uncovered, for 1 hour.





Add beef stock and enough water to yield about 1/2 inch of liquid in the roasting pan. Lower oven to 300ºF, cover pan tightly and continue cooking for 3 hours, or until fork-tender. Remove brisket to cutting board w/ juice wells or to a large platter and allow to rest under aluminum foil for about 20 minutes before carving.





Now trim the fat off, and slice meat thinly across the grain. Top with strained juices from the pan.

Meat is a very healthy choice..have a steak with blue cheese, or a nice pork tenderloin.. yummmmmmmmmmmm
Um...make some curly noodles ( i dont no the name) add some mushrooms, olives, some pieces of carrots (other things if u want) on top ( dont mix in, on top) and add some mozzarella cheese and melt it on top of the noodles and vegetables.

This is so simple but so good...I have a passion for feta cheese and kalamata olives so it's a natural for me. Angel-hair (capellini) pasta topped with your favorite marinara sauce and sprinkled with feta cheese and the olives. A great salad on the side. (The kiddos would probably just eat the sgetties....)
How about this one, we tried it a couple of days ago and it was really good.


15 Minute Italian Chicken %26amp; Rice with Vegetables


Prep Time: 5 min


Total Time: 15 min


Makes: 4 servings


1 Tbsp. oil


1 lb. boneless skinless chicken breasts, cut into strips


3 cups cut-up fresh vegetables (broccoli, carrots and red pepper)


1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth


2 cups MINUTE White Rice, uncooked


1/4 cup KRAFT Zesty Italian Dressing











HEAT oil in large skillet on medium heat. Add chicken; cook and stir until lightly browned, stirring occasionally.


ADD vegetables; cook and stir 3 to 5 min. or until crisp-tender. Stir in broth. Bring to boil.


STIR in rice and dressing; cover. Reduce heat to low. Cook 5 min. or until liquid is absorbed and chicken is cooked through.

Do you have a crockpot?





If so, you will need 4 bone in chicken breasts....a bag of frozen baby carrots... 2 cans of cream on mushroom (or cream of chicken) soup.





Place baby carrots on bottom or crockpot. put in on e can of soup(do not add liquid)


Put chicken breast on top of baby carrots. Add 2nd can of soup put on low for 4-5 hours and you are ready to serve.
I have a George Foreman, so some times I like to take a peice of boneless chicken or pork season with some Mrs. Dash, and grill, or sometimes even a Good stir fry . Not sure what your family likes so unsure what recipe to send. Pizza Dogs- 8 Beef or Turkey hot dogs, 8 Hot Dog buns ,split and 1 cup of mozzarella cheese (4 oz), 4 med grn onion tops, dices and a 1/2 cup pizza sauce. warm dogs, and sauce serve on bun top w/ cheese %26amp; onion if desired. kids %26amp; dad loves them.
Taco chicken......Put four bonless skinless chicken breasts into a crockpot.....add one can corn....one can kidney beans.....one cup salsa....one package taco seasoning mix....one cup chicken broth.....cook for 5 or 6 hours, remove chicken and add one cup cheddart cheese to sauce stir until melted, serve over rice garnish with sour cream, add a salad on the side.


Since your kids are young, use mild salsa and mild taco seasoning.
