Need quick, healthy, easy recipes that my 2 year old will eat.....?

I am a single mom who works 50++ hours per week. I have limited time, as well as, a limited budget. Plus, truth be told, I am really not a great cook. I need some ideas for pasta dishes or any type of meal that my 2 yr old son will eat and that I might be able to pack in his lunchbox the next day?? Something easy and quick.





He is a fairly good eater but I would love to find more ways to get him to eat his veggies (that is the age old question right)!





Anyway, all recipes and ideas are very welcomed!Need quick, healthy, easy recipes that my 2 year old will eat.....?
I have two good ones that help use up whatever is in the fridge.





Pasta Bake


Cook pasta, such as Penne a little undercooked (this is a great way to use up the mismatched old boxes of Penne %26amp; Rotini in your pantry)


Saute chopped veggies such as mushrooms, carrots, zucchini, bell peppers, olive, broccoli – just about anything. You can also add some ground meat or frozen meatballs and saute with the veggies.


Mix veggies and/or meat with your favorite sauce. If you’ve got leftover cooked veggies, dump them in too.


Layer in baking dish with cheese (again all the leftover stuff in your fridge like parmesean, cheddar, mozarella, mixed with Ricotta), top with grated cheese and bake at about 350 degrees until bubbly.





“Homemade” Soup


It’s the same theory as above: use leftover meats and chopped veggies, plus some undercooked noodles or rice. Simmer in chicken or beef broth (read the label, a lot of broth is full of MSG). If you're making chicken, cook one extra chicken breast to chop up for soup and chop extra veggies of whatever you are already having.
