What is your favorite quick and easy healthy meatless recipe?

Veggie Lasagna





1 zucchini, chopped finely


1 small onion, chopped finely


3 carrots, chopped finely (or 1 bag shredded carrots)


1 bunch asparagus, chopped finely


1 summer squash, chopped finely


1 lb mushrooms, sliced thin


1 package frozen spinach, thawed and drained


Lasagna noodles (no boil kind)


1 1/3 cups marinara sauce


2 cups mozzarella cheese, shredded


1 container ricotta cheese


1 egg


2 palmfuls grated parmesan cheese





Oven = 400 F Heat 1 T olive oil in pan over med-high heat. Add onions and carrots, cook for about 5 min until transluscent. Add remaining veggies and saute for another 5 min. Take away from heat and let cool while doing step 2.


Combine egg, ricotta cheese and spinach + salt and pepper. Mix until well combined. In 13 x 9'; pan, put about 1/3 c marinara in bottom of pan followed by layer of noodles, followed by 1/2 of the ricotta cheese mix, followed by half of the shredded cheese, followed by veggies, followed by remaining ricotta cheese, then noodles, then 1 c. marinara and lastly the remaining mozzarella and parmesan cheese





Bake for about 30 min or until cheese is thoroughly melted and golden on top. Let sit for 15 min before serving.What is your favorite quick and easy healthy meatless recipe?
Quick Quesadillas


Makes 8 servings





Quick quesadillas make a great weeknight dinner. Top with your favorite salsa and serve alongside a green salad.





Nonstick olive oil spray


2 zucchini, chopped


1 teaspoon chili powder


1 teaspoon ground cumin


1 teaspoon garlic powder


1 teaspoon onion powder


2 scallions, thinly sliced


15 oz can black beans, drained and rinsed


16 (6-inch) flour tortillas


8 oz shredded reduced-fat Monterey Jack cheese


1/2 cup chopped fresh cilantro





Drain and rinse the canned beans. Put in a large mixing bowl. Grate the zucchini. Toss the grated zucchini with a teaspoon of salt in a colander, then squeeze out excess water. Combine the zucchini with the beans, spices, grated cheese, and scallions. Spritz one side of each tortilla with olive oil spray. Place eight tortillas oil-side down on a baking sheet. Spread some filling on each tortilla then top with another tortilla (oil-side up). Broil 1-2 minutes (until golden) and flip. Broil the flip side another 1-2 minutes.

Dump some tortilla chips on a like baking sheet, pour some cheese over them, however much you like, cut up some peppers and tomatoes, put those on there, heat the oven up to 350*F and put them in there until cheese is melted. Yummy and healthy. (:





Or you can try crackers with organic pb





Some chips with salsa.





Some noodles with just plain tomato sauce.





Steamed vegetables with brown rice.
Wholemeal Spaghetti Bake








1 large onion, chopped finely


1 clove of garlic, peeled and crushed (optional)


4 oz. (100g) mushrooms, sliced


1 apple, cored and grated (don't grate until just before use)


Tin chopped tomatoes


Tomato puree


8 oz. (200g) wholemeal spaghetti


2 oz. (50g) hard Vegan 'cheese', grated





Preheat oven to GM 4 / 350 °F / 180 °C.





Fry onion and garlic for 5 minutes in 2 teaspoons of olive oil. Add mushrooms, cover and cook for 5 mins. Stir in apple. Add tomatoes and 1 tsp sage, 2 tbsp tomato puree. Cover and simmer gently for 10 mins until the sauce is fairly thick. Meanwhile, cook spaghetti for 5 - 7 minutes until just tender. Drain it and add to the sauce.


Turn the mixture into a casserole dish.





Sprinkle grated cheese on top and bake in oven for around 25 minutes.
Capellini Pomodoro


Prep Time: 10 minutes


Cook Time: 10 minutes


Serving Size: 4 8 12





Ingredients


14 oz capellini pasta (angel hair)


8 medium tomatoes, cut into ½” pieces


11 fresh basil leaves, chopped


2 cloves garlic, chopped


6 Tbsp olive oil


Salt and freshly ground pepper, to taste





Procedures


COOK capellini pasta according to package directions.


MIX diced tomatoes, chopped basil, garlic and oil. Season with salt and pepper.


DRAIN pasta. Toss pasta with tomato mixture in a sauté pan and heat throughout.


SERVE immediately
Fresh garden salad with mangoes, grapes, feta cheese and simple vinaigrette.
