For this pasta-style dish (which sounds quite healthy and delicious), I'd go with a very light amount of good-quality extra-virgin-olive-oil and a small dusting of the garlic salt. The olive oil will not only keep the pasta from sticking together, but it will provide healthy fats and a super-mild taste.
Also, when I use olive oil on my pasta, sometimes I like to add a little kick with either a tiny amount of crushed pepper (gives dish a little heat w/o so much spice) OR some sun-dried tomatoes (sliced/cut into lengths). The sun-dried tomatoes mixed in with pasta are my favorite, but considering you have several veggies already in this pasta, you may not want them to compete with flavors.

Just saute the veggies in olive oil, with some garlic salt and whatever herbs you have (oregano, basil, parsley, rosemary) and toss it with the cooked spaghetti.....
Since you seem to know what you want and what you do not have why not search the web for your ideas?

Your basis is cornstarch (cornflour in UK) or arrowroot to provide the thickening, although you could use potato flour.
For the flavouring use a mixture of vegetable stock (made from a cube), Maggi seasoning (you could substitute soy sauce), and a few spices such as cinnamon, nutmeg and paprika. If you want it more peppery add some Worcestershire sauce.
Instead of wheat spaghetti which is not suitable for coeliacs or wheat intolerant people, why not make your own using either Glutafin flour or potato starch.
Making your own spaghetti:
Take 300g/10陆oz Glutafin flour/cornflour/rice flour/potato starch
3 medium free-range eggs, beaten
approximately 3 tbsp cold water
1. Bring a large pan of salted water to the boil.
2. Sift the flour into a large glass bowl and add the beaten eggs. Mix together with a wooden spoon. As the dough gets thicker gradually add a little water, a splash at a time, until you have a soft and slightly runny dough.
3. Pour the dough into a metal colander held over the pan of boiling water, taking care not to burn yourself with the steam. Use the back of a ladle to rub the mixture through the colander. As the dough hits the water it will form thick 'squiggles' shaped like spaghetti.
4. Cook until they rise to the surface - they will cook very quickly.
5. Lift out with a slotted spoon
