GRILLED SALMON

3 Tbsp. fresh lemon or lime juice


salt


1 lb. salmon steaks or fillets


olive oil spray





Cut salmon into 4 oz. serving sizes. Sprinkle salmon with freshly squeezed lemon or lime juice (try them both on different days, as they each have their own flavor). Marinate for 30 minutes, basting them every 10 minutes.





Sprinkle tops of fish pieces with chef's salt A thin layer will be fine, they don't need a lot.





Spray pan and tops of salmon pieces lightly with olive oil spray, and grill or broil until fish flakes when tested with a fork. Watch them carefully, as you don't want them to dry out! SERVES 4.

I just call this seafood pasta. Sautee up a few cloves of diced garlic (depends on how garlicy you like things I generally use 2), and 2 shallots (or 1 small onion) with salt, pepper and a little bit of red chili flakes, maybe about 1 tsp. Then add 1/2 c. white wine (or chicken stock, but the wine is better), and let this simmer for about 2 minutes, the add 1 large can of diced tomatoes. Once this has come to a simmer add whatever fish or sefood you like. If you add fish, add it about 5 minutes before you add the seafood. And make sure that it's a firm white fish. Then add your seafood. I generally use shrimp and/or clams. Cover and let simmer until your seafood is just done. It should be no more than 5 minutes. Pour this over cooked pasta. I like Barilla Plus (tons of fiber, protein and iron) linguine, but any will do. Top with fresh ripped basil.
